Evidently her bullheadedness is working - why did you offer 80% of the equity? Is that in lieu of some other asset (e.g. pension) or was it just intended as a bribe to get the matter resolved?
I really don't think you are a bad position at all with these negotiations - it just depends how you play it. Unfortunately making overly generous offers because she refuses to budge will be something you will come to regret for the next few decades (as my friends have).

You need to make an appointment with a family lawyer and get proper advice.
Don’t let her badgering get to you. Don’t get into arguments over this.
She is playing mental games with you to get her own way.
You need to stand up for yourself.
There is not going to be an easy way out or an amicable agreement.
Go and get legal advice.
