    I rarely read the gas meter, I just pay £15 per month and I had a £150 credit from a charity about 18 months ago, when I do read it and by my suppliers bills I am about £120 in credit still. ;;

I think the nighttime read was only about 200, the 902 I assume is combined day and night?

Please get into the habit of reading your meters monthly - you will avoid shocks that way. £15   barley covers the standing charge.

Is cooking gas or electric. ?

Based o n your previous "Found it, 632 daytime 202 night-time."   then yes. But that 202 is high for a gas heated property.  You have something on at night that is consuming this power.

The quoted internal temperature of 21 degrees is making me suspicious - even for a flat with a property below, that seems incredibly warm unless of course it's super-insulated.

If you open the hot tap on your sink and hot water comes out, there must be something heating it.
That could be your gas boiler or you might have an electric hot water tank.
What's the make and model of your gas boiler, can you tell? And possibly share a photo of it?

I can check, but I know the boiler has icons like a tap AND radiator, and I think a tap only and a off setting and I set it to tap only and I think there's a pre heat option and I have that set to off, so I'd say it is a gas boiler and had gas safety checks that check the heat at taps.

When I run the taps after a second or so I hear a sound, sometimes a whoosh and hum and takes some time to heat up, maybe 30 seconds to get to a good temp.

How was your water heated before the boiler was fitted?

It was installed years before I moved in, but there is a cupboard where a water heater used to be that still has pipes that are covered by a wooden panel.

Electric, but most of my cooking is microwave and maybe twice a week air fryer or a mini oven on for about 15-20 minutes.

My neighbour has the thermostat of their home set to 24 all day and even has heating come on during night if it drops below a certain temp and when its really cold have it even higher, they are pensioners.

Nothing saying the thermostat is wrong though, I feel cool today and the thermostat claims its 21.

NP, will do so later as it's downstairs and I have a bad leg,

I guess silly question but that doesn't do any difference right, I have a cottage flat and my meter is downstairs at the front door and my flat is upstairs.

I just put on a hob to boil some pasta to use some food up and its using 1.5kW extra I think that's normal.

I actually had an issue with my cooker about 2 months ago that it wouldn't turn on after I moved it to get something behind it, one of the connections had loosened and friend disconnected and reconnected it and it has worked since.

That sounds very much like a combi boiler, which doesn't require a hot water tank. So we probably need to look elsewhere for your electricity consumption.
