Thought I'd post my menu plan for this week as I find reading other peoples have helped me no end for inspiration.
As an aside all meals are for me and Mr Sparkle who is possibly the worlds most fussy eater, though he is willing to try and slowly getting better. When we got together he ate red meat, pizzas and microwave burgers and that's seriously it. We're getting there slowly and discovering new things but that's the explanation for some of the meals being samey or lack of veg(he only likes mushy peas so far!) he also doesn't like potato unless roasted or chipped.
Thursday- Salmon, roast veg and mashed neeps and tatties(chips for Mr Sparkle)
Friday- Steak and peppercorn sauce with roast potatoes and mushy peas
Saturday- Grilled tuna with chips and salad
Sunday- lasagne and salad
Monday- Steak pie and roast potatoes and mushy peas
Tuesday- homemade pizza
Wednesday- Spaghetti bolognaise
So I know there are a few areas I can save on, I buy frozen roast potatoes for 68p a bag and the steak and peppercorn sauce is from when we were throwing money around willynilly. I'm using jarred sauce for the lasagne but I do know how to make my own, the jars were in the back of the cupboard though. The tuna was 59p from the feezer at tesco and looks to be 2 good sized portions so I'm hoping it tastes good because it was quite a bargain.
This will be Mr Sparkle's first taste of lasagne, bolognaise and tuna so fingers crossed please that I can add a few new acceptable foods to the list by the end of the week. Planning to grate some veg into the sauces in the interest of keeping him healthy.
Breakfasts will be porridge with seeds and fruit for me, probably bacon sarnies or cereal for him.
Lunches will be sandwiches and yoghurt
Snacks of fruit, yoghurt anything we can scavenge from the backs of the cupboards. Haven't ordered any biscuits, sweets or crisps in the asda order so Mr Sparkle will be in for a surprise tomorrow when it arrives :rolleyes:0 -

well done for your first menu! I think it looks really good. I hope Mr Sparkle enjoys it.
My OH didn't eat a lot of variety when I first met him but over the years I have indoctrinated and brainwashed and encouraged him to try new things and now he eats nearly everything. A little at a time and he will get better, especially if you are home cooking food - everyone likes home cooked food!

Hence the meal plan isn’t that exciting next week but practical, we usually have an exciting week and then a practical week. The practical weeks have the advantage that there is hardly any washing up to do which means that you can get on with other things.
Monday: Egyptian Rice (freezer)
Tuesday: Penne Arrabiata (freezer)
Wednesday: Chilli with rice (fresh plus portions for freezer)
Thursday: Chickpea Tomato Curry (from freezer)
Friday: Egyptian Rice (freezer)
Would it be possible to get the recipes for the prawn & chorizo jambalaya & the egyption rice please? They both sound scrumptious!!!

Hmm haven't posted in this type of thread... not sure if I can do a whole week.. will have a go.
Today: HM fishcakes, HM mushy peas, HM Wedges and HM tartare sauce (well I didn't make the mayo!LOL!)
Tomorrow: Quiche Lorraine or Cheese and onion according to vegi or not. What shall w have with that?
Saturday : Pasta bake (using up turkey)mushroom and cheese for dd if she is here
Sunday:3:Hopefully invite from MIL!
Other days
1: HM Pizza
2:Jacket potato
3: Bol with mince/quorn mince. Will freeze rest for dd

OH is Head Chef so never tells me in advance but here's what we've had so far
Sunday: roast beef,carrots,courgettes,roast pots, yorkshire pudding
Monday: Much the same as sunday (except courgettes) -reheated leftover yorkshire, braised some of the beef with carrots, roasted pots.
Tuesday: beef stew and dumplings, carrots, pots in the stew (beef remains of sunday roast)
Wednesday: Jacket potatoes with cauliflower cheese/bacon/tomatoes
braised beef with carrots, roasted pots.
Thursday: OHs home made beefburgers and chips
Friday: Not sure yet as it'll just be the two of usMary

The residents of Mean Mansions will be having the following from 11th Jan...
Fri....hm calzone filled with tomato/cheese from fridge (mixed) caramelised onion and chorizo, salad;
Sat....gammon steaks with stir fried greens and mash;
Sun....baked bream with mashed carrots/swede and mash, white sauce;
Mon...freezer debris of hm beef stew with dumplings, individual shepherd's pie;
Tue....turkey curry with rice and mixed veg, hm bread;
Wed...spaghetti carbonara with salad;
Thurs...grilled mackerel with baked beans and hm wedges.
Pudding on offer will be fruit or Christmas cake
At least two vats of whatever kind of soup I fancy will be available during week to consume with bread

Prawn and chorizo jambalaya
This is my version of a Waitrose recipe, and IMHO absolutely delicious! You could use ordinary prawns, but as I usually reserve this dish for treats and special occasions, I tend to use king prawns that were/are on offer or in the reduced section.
150g Basmati rice
1 bag/pack of cooked king prawns (these bag/packs are not usually very big, I have no idea of the weight and currently have none in the freezer…I tend to stock up when I find them on offer or reduced)
1 chorizo sausage diced (I buy mine in Morrisons where it’s much cheaper but still really good stuff…I don’t see why you couldn’t buy chorizo already sliced and then cut it into smaller pieces)
1pt of chicken stock
3 sticks of celery, chopped
1 onion cut into thin slices or diced (I often can’t be bothered to dice, slicing is fine)
2-4 cloves of garlic crushed or chopped (quantity depends on size of garlic…of course you can adjust this to suit yourself J)
1 400g tin of tomatoes (I use Basics chopped ones, but you could use ordinary ones and chop them/blend them up a bit)
Mixed spice to taste
Dried oregano to taste
Black pepper
Tabasco sauce to taste (I love this stuff J)
1) Fry onion and chorizo in a flame proof pot or saucepan (I tend to use my Le Creuset pots for this, although when I made it for several people I used my big soup pot instead) You shouldn’t need to add any extra cooking oil as the chorizo is very oily.
2) Add celery and garlic and cook for another 3-5 mins (the other ingredients should stop the garlic burning)
3) Add tomatoes (including juices), chicken stock, rice, oregano, Tabasco, black pepper and mixed spice. Stir well and simmer until rice looks cooked.
4) Add prawns and cook for a further 3 minutes to ensure the prawns are heated through but not turned to boot leather texture)
