I'm trying to use up all my storecupboard, fridge and freezer food. I'm only buying fresh fruit and veg, frozen peas + sweetcorn, milk, butter, cheese, juice, tea and coffee, flour until there is nothing left in my cupboards ;)

I've made a list of 30 + meals I can make without any extra shopping (apart from the above). I'm hoping to use the majority of it by the end of Jan.

I've picked 7 meals from my list for this week.
Today -roast chicken, roast potatoes, carrots and peas/beans
    orange halves
Sunday -slices of chicken in a cheese and bacon sauce, beans, sweetcorn
chocolate fudge pudding and creme fraiche
Monday- chicken risotto + some sort of salad
Tuesday - sausage cassoulet, baked potatoes
Wednesday - leftover -various things from the freezer: cowboy beans, pheasant casserole, lentil stew + rice or pasta
Thursday - Spanish rice with chorizo (peas and peppers in that) +plus a salad of sorts
Friday - Spicy chickpea stew and couscous, cucumber salad

Week day puddings are fresh fruit or hm yogurt and honey/brown sugar.

Oh gosh, I'm so behind after the stress of Thursday :(
We had Thai Green chicken curry last night (with rice and veg)
Tonight we are having fish fingers, potato lattices and baked beans
I'll have to update with the rest of the week tomorrow as I've not had the chance to think these past couple of days. I have a chicken in the oven (won't be ready for dinner tonight though) so that'll be bouncing around a bit!

Monday - Chinese ribs (left over frm bbq season) potato wedges
    Tuesday - Lancashire hot pot

  • Meal plan for this week:
Saturday - pasta with homemade tomato and mushroom sauce
Sunday - salmon fillets, new potatoes and salad
Monday - veg stir fry and noodles
Tuesday - quorn fillets in honey & mustard marinade, broccoli and mash
Wednesday - red onion & goats cheese tarts with salad
Thursday - roasted peppers stuffed with couscous and salad
Friday - spinach and ricotta cannelloni with salad (plus portion for freezer)

Have got everything planned for the rest of the month as well, so only need to buy the veg as I go.
I've cheated and bought the honey and mustard marinade, but want to try and make it myself in the future so need to locate a recipe - any suggestions?

  • Next week we are going to have a few things out of the freezer - that is the thing when you put them in you have to take them out as well and eat it - otherwise it defies the object.
Hence the meal plan isn’t that exciting next week but practical, we usually have an exciting week and then a practical week. The practical weeks have the advantage that there is hardly any washing up to do which means that you can get on with other things.
    Monday: Egyptian Rice (freezer)
    Tuesday: Penne Arrabiata (freezer)
Wednesday: Chilli with rice (fresh plus portions for freezer)
Thursday: Chickpea Tomato Curry (from freezer)
    Friday: Egyptian Rice (freezer)
