    I'm not big on seafood, but make prawn jambalaya fairly frequently - it's a great one pot dish to use up whatever veg you have knocking about, and a handful of frozen prawns is pretty budget friendly. I usually add chorizo, but there's recipes online for chicken and prawn, sausage and prawn... They all use different veg too, showing It's hard to go wrong! 

    There's also puttanesca for a super quick & easy dinner.

    We eat fish a couple of times a week.  I tend to buy mine frozen or tinned.  At this time of year, grilled smoked/peppered mackerel makes a great addition to salads, especially potato salad or a warm French lentil salad.

    This is what we had for dinner last night.  It makes 4 generous servings and takes about 20 minutes.  Serve on rice:

    Quick Tuna Curry

    2 tins tuna in brine, drained
    1 tin chopped tomatoes
    1 onion, chopped
    100-200g mushrooms, sliced
    1 large carrot, sliced
    1-2 red/yellow/green peppers, roughly diced
    1 cup frozen peas
    1-2 cloves garlic, crushed
    1 tablespoon garum marsala
    0.5-1 teaspoon ground chilli
    2 tablespoons oil

    method

    1. Heat the oil in a frying pan.  Gently fry the onion and mushrooms until the onions are glassy and the mushrooms have made liquid.
    2. Add the garlic and peppers and fry until the liquid has almost evaporated. 
    3. Stir in the garum marsala and chilli, and fry until the aroma rises.
    4. Add the chopped tomatoes, tuna, peas and carrot.  Bring to the boil and simmer until the liquid has thickened up, about 10 minutes.
    5. Serve on rice.

    ETA:  strong tasting tinned fish like mackerel or pilchards in tomato sauce will take curry flavours really well, so you might want to try making a Madras curry with those.

    As this is MSE, I have to point that an economical way to eat good quality fish is to shop at Costco.
    You can buy a side of Salmon, and cut it into pieces at home and freeze them . Definitely cheaper than buying individual pieces of Salmon at the supermarket, and less packaging waste.
    Also you can buy bags of frozen filleted sea bass. Each piece costs about the same as the supermarket, but is about 50% bigger.
    Plus they sell cod and haddock fillets as well. Plus frozen breaded fillets, again bigger than you normally get. 

    The only trouble is that you have got to be a member, although it is not that difficult to become one. 
    It's only worth being a member if you live near to a Costco.  It isn't viable for my DH and me as we live too far from the nearest one.  We are about an hour's drive from our nearest and would also have to pay to cross the Thames so really not economical.  We were members for one year when we were offered a reduced price but because of the distance we only went once to the shop although we did take our motorhome to fill up on our way to a campsite once as well.
    I was going to say, the frozen tilapia loins at Costco are really nice and good value. Someone else might like the info. I used as part of a fish pie and also for another recipe that I do, which has courgettes and tomatoes under the fish and topped off with a sauce made with tomato puree and horseradish.   Not keen on Horseradish but I like this.  It's in German and a photocopy otherwise I would post!

    Prices for fresh fillets make it a treat rather than a staple in our house now. But I'm a fish lover, so the following feature regularly in our household:

    - olive and anchovy pasta (like putanesca pasta but without capers) 
    - kale and anchovy pesto, used on pasta. Roughly this recipe but blitzed to pesto consistency in a food processor. Freezes brilliantly, so I make loads when we have a veg glut.  
    - cheats kedgeree using smoked mackerel 
    - homemade sushi with either smoked mackerel, spring onion and cucumber, or smoked salmon pieces with avocado and ginger
    - tray bake with chorizo, butter beans, tomatoes and any kind of white fish fillets (normally reduced price) 
    - bag of frozen mussels turned into gratin with tomato sauce, stacks of garlic and chilli. Can't seem to find an equivalent online 🤔
    - straightforward margarita pizza jazzed up with anchovy fillets and halved black olives

    @ouraggie I recently noticed Lidl has those as well and have been meaning to try them. They're a good buy you think?

    Another vote for frozen prawns, I pop them in egg fried rice and Thai curries, and also love them with chorizo in pasta or warm salads with chunky HM croutons 😋

    salmon pasta with peas (flaked salmon, tomato pasta sauce, pasta and peas

    smoked haddock kedgeree 

    fish pie

    cajun blacked fish (salmon/cod/haddock have all worked well)

    ’italian’ cod (cooked in a tin foil parcel topped with chopped tinned toms, Italian mixed herbs and then topped with olives)

    Thanks so much for all your suggestions. 

    I had not thought of combining fish with beans or lentils, so will give that a try. 

    Also like the jambalaya and Cajun fish suggestions, and need to start looking into that more.

    Not recipes but to get your fish for healthy eating and just because I like it - 

    I buy most of my fresh fish YS whenever I see it so have salmon, cod or haddock once a week. 

    To add to that I have tinned sardines in water or mackerel (I like the one in mustard sauce) on toast or with a salad. I keep a bag of prawns (or YS fresh then frozen when possible) and have prawn cocktail or on a jacket potato with HM Marie Rose sauce. 

    The, when I'm out to eat (not so mse 😊), I tend to choose the fish dishes. 

    Overall, I'm getting my healthy balance of fish.
