To keep the OH from rolling his eyes at me if I buy salmon I also get butterflied seabass when the price is right.  Just pan fried in butter normally.

As this is MSE, I have to point that an economical way to eat good quality fish is to shop at Costco.
You can buy a side of Salmon, and cut it into pieces at home and freeze them . Definitely cheaper than buying individual pieces of Salmon at the supermarket, and less packaging waste.
Also you can buy bags of frozen filleted sea bass. Each piece costs about the same as the supermarket, but is about 50% bigger.
Plus they sell cod and haddock fillets as well. Plus frozen breaded fillets, again bigger than you normally get.

The only trouble is that you have got to be a member, although it is not that difficult to become one.
It's only worth being a member if you live near to a Costco.  It isn't viable for my DH and me as we live too far from the nearest one.  We are about an hour's drive from our nearest and would also have to pay to cross the Thames so really not economical.  We were members for one year when we were offered a reduced price but because of the distance we only went once to the shop although we did take our motorhome to fill up on our way to a campsite once as well.

I love all these suggestions. Hadn't thought of kedgeree, which is right up our alley, really. I also did not know that basa was a good replacement for haddock.

We do fish pie once in a while, but it depends on whether we can get the fish for a decent price. Usually we poach the fish in the milk to make the white sauce and squeeze as much fish flavour in there as we can.

We also do the fish in the oven variety, but I like some of the suggestions for additions in the foil packages. We usually are not terribly inspired and just toss some sliced lemon in. I will try some of the suggestions to up my game there

I am excited to try some of the linked recipes. I like Rukmini Iyer's roasting tin series and am also a Delia fan, so keen to give those a go.

We live rurally, so cooking at home is a big thing for us as there are no options locally for take-aways and supermarkets are a bit of a drive away. We therefore tend to give things a go ourselves, sometimes successfully, sometimes not so much :D

I would also recommend fish curry. In emergencies- I.e. family crisis- I have added pieces of fish to a jar of curry sauce. Cooks in under 10 minutes. More money saving to make your own sauce of course - just not so spicy that you can’t taste the fish. Look at Bangladeshi recipes and also ones from Goa as they have lots of fish in their cuisine. Madhur Jeffrey’s recipes are good, as are the Hairy Bikers ones.

@longestgame - if you have a FarmFoods near you they do reasonably priced frozen fish - about the same price as SMs but for much bigger bags.  Sign up for their emails and you'll often get money off vouchers or various deals.

I live a long way away so tend when the freezer is getting low  I can do a good stock up.

    Salmon with a pesto top.
Pesto, Tom purée, garlic paste, lemon juice
mix together and spread onto salmon and bake.
Great on top of pasta or with a plate of veggies and a jacket potato.

Fish pie - I make it with onions, peas, white sauce, salmon, cod and prawns and mash on top.

Sardines on toast - add a little balsamic vinegar and tomatoes chopped to the mashed sardines. And for those cheese lovers add a little Parmesan.

Sole pan fried with a nut brown butter ( butter paced in frying pan then when melted add a squeeze of lemon - it will turn quick - then pour over cooked fish).

Swordfish or Tuna steak with stir fried veggies and noodles. Sweet chilli sauce

Tuna pasta - tuna, mayo, spring onion, sweetcorn mixed with pasta

oven bake fish with just lemon and salt and pepper

pan fried large sardines - DH has these with salad

mixed bag of seafood with homemade tomato and vegetable sauce and pasta

make own pizza and top with tuna, sardine, prawns, mozzarella cheese and then slices of tomato on top - Pizza Hut's old seafarer pizza.

DH has anchovies, capers and olives on top of his pizza.

Jamie Oliver does some nice pasta / fish recipes. I have made an anchovy one with raisins, red wine and pine nuts for my DH.

    DH microwaves kippers 🤢

Once a year we will buy chunky fish fingers and have a couple of fish fingers in a brioche bun with mayo and lettuce OR a fish finger butty 😊

Call me a snob @joedenise but I really do not like the fish from Farmfoods, it's very bland. Much better quality in Iceland and aldi.

I make a seafood pasta dish, it's never the same, if I have going over tomatoes in the fridge I pop them into a pan with olive oil and chilli, mix with a few herbs and add a bag of defrosted seafood, serve with stirred through spaghetti.
It also works well with a jar of chilli pasta sauce.

Chorizo and prawns go really well together with pasta.

Seafood stew, served with crusty bread. (Great with leftover potatoes in it)

    Sesame prawn toasts.

    Prawn and chorizo fried rice.

    Salmon and prawn risotto.

A little houres douvre (sp) squares of bread, brushed with melted butter, shaped  into a bun tin, baked for 10 to 15 mins.
Add some cream cheese, flavoured or plain. Top with a few prawns and some fresh dill feathers or baby tomatoes.  The little cases also look good with individual prawn cocktails.

I agree with you @jwil - the reason I mentioned it was because the OP asked about "budget" recipes so I was pointing out that FF are cheaper than Iceland as you get more for your money!

Aldi does “salmon pieces” (still large, tho) for £2.85. Usually you get 2 or 3 biggish pieces. Slightly odd shapes but i can live with that.

Bean salads: chickpeas, butter beans, cannellini rather than borlotti, or just cooked green lentils, oil and vinegar/lemon dressing, with either tinned anchovies, sardines, mackerel, or salmon. If in oil, just add the acid rather than more oil.

Just before serving, add chopped onion, olives, tomato and salad herbs if you wish.

Or the old fashioned tonno e faglio.

If baking fish, top with chopped olives, feta, tomato and a drizzle of oil.
If you've have not made a mistake, you've made nothing

I tend to haunt M&S food and waitrose on Mondays in hopes of reduced price fish - I’ve had some real bargains. M&S do a lovely proper smoked haddock which I get when on reduction and put in the freezer until I am ready to make a fish pie.
