    We are lucky enough to have a huge victoria plum crop this year.
    As well as jam and chutney I am planning some baking for traybakes etc.
    Alot of the recipes mention almond flour?  Could I use self raising or plain instead as I would rather use up what I have.
    I'm also not a fan of almond taste and I'm sure it is quite an expensive ingredient.
    Does anyone have some tried and tested plum recipes too please?
    I absolutely love plums just off the tree. I would also make plum compote to have with yoghurt, just chop them up and cook them down with water and then add sugar to taste. Delicious.
  • I have a ludicrous amount of food in. Two more portions of ratatouille, ingredients for rice salad, chip butty, freezer meals etc. I’m going to eat them up and then tackle the cupboard.
  • Have started looking at what is in the cupboard. I’ve got a few things out that are going out of date and I’ve put them on the Olio app for people to collect.
  • Rice salad tonight. I add vinaigrette and then at the last minute, mix it with a slug of mayonnaise. Secret recipe.

    Beginning of next pay month need to use the freezer filo pastry. Will probably need some expensive ingredients. Might make samosas.

    I have to get all the ingredients out of the cupboard and write a list of them on my phone for checking. Gonna make banana bread tonight.

    Shopping list - eggs, mayo.
  • I went to Aldi at the weekend and spent £20 on fruit and veg. I realised I hadn’t been eating any vegetables at all. That’s the trouble with a pantry challenge.

    I need to have a dig in the freezer and see what I have. Also when I have time (when is that going to be?) I need to make a list of everything in my cupboard to inspire me to use it up a bit. It’s chock-a-block!
  • I never made the banana bread. They oozed all over the side and went in the bin. I should never buy more than one banana at a time.
  • I used up some rigatoni that I really didn’t like much tonight for dinner. Tidied one shelf of the cupboard this morning. Have several good rice recipes up my sleeve thanks to the Guardian Feast app.
  • I also made rolls this morning which used up some flour. I will have fresh rolls for lunch for the rest of the week.
