Pantry challenge

  • Am trying to actually make tasty meals with the pantry and freezer ingredients but obviously that tends to involve a bit more spending on ingredients. Used two salmon fillets out of the freezer to make a miso and sesame noodles with broccoli and salmon. It was very delicious and I’ve got a portion left for cold tomorrow evening. The £2ish I pay for the Feast app is money well spent. You can search by ingredient and it has some great recipes on.

  • I’m down to two freezer batch meals and then I just have chips and 5 portions of coley to eat from the freezer, which I’m going to make fishcakes from. Then I’ll tackle the cupboard. I have four rice recipes saved on the feast app and I think rice is going to be the theme for September.

  • I'm filling up my freezer with veg from the allotment, hoping to manage until end of Feb with it all. Potatoes stored.

  • Four days of air fried pork loin out of the freezer now with potatoes and broccoli. I very rarely eat meat but got this reduced a while ago. I have enough potatoes to do four days, will have them boiled, sautéed and roast I think. I also have dwarf beans and sweetcorn that I got in the supermarket today.

  • Fish (coley) from the freezer to make fishcakes with some mash from the freezer (hope it is ok, I did wonder how I would ever use it) tonight and tomorrow. Then away for the weekend.

  • Fishcakes were delicious. The recipe also used up some nori that I had in the cupboard so that was a bonus. I also had them with a few chips out of the freezer. I’m away over the weekend. I got some courgettes free last weekend so going to make a big courgette risotto when I get back that should do me 3-4 days.

  • The courgette risotto is going in the freezer. I might have a chip butty tonight. Also a mystery freezer pot tomorrow (maybe curry) and a couple of bits of frozen fish the next couple of days.

I have a code for 40% off Planthood boxes so I may get a couple of them if they do single portions. Otherwise I will do a supermarket order for Sunday.

  • Am poorly so pantry challenge is taking a rest for a couple of days. I just done an Uber Eats Sainsbury’s shop, usually delivery is much more expensive but I had £13 off £25 so it was actually quite good value.

  • Hello,
We are lucky enough to have a huge victoria plum crop this year.
As well as jam and chutney I am planning some baking for traybakes etc.
Alot of the recipes mention almond flour?  Could I use self raising or plain instead as I would rather use up what I have.
I'm also not a fan of almond taste and I'm sure it is quite an expensive ingredient.
Does anyone have some tried and tested plum recipes too please?

  • Made a bolognese pasta bake and nearly used up some shells that have been in the back of the cupboard for years now. I also used some stock and a bit of white wine out of the freezer which I am very pleased about.

I have two more coley fillets in the freezer to use, which I think I will make a fish curry out of. Also some filo pastry, there are lots of tasty recipes on the Feast app for filo pastry so I’ll be able to make something with that. Then I think that’s the freezer done (there are a couple of things I’ve put in recently but they don’t count.

Now I can really make a start on the cupboard.
