The same risk would surely exist whether you used a freepost address, a postage paid envelope (of any provenance), or a stamped envelope.
To mitigate, you could get a certificate of posting in order to claim for loss.

Should the Mansfield account still be available when I need to open another, I would use a stamp (if they do not provide a prepaid envelope on maturity) and proof of posting to return the passbook. It seems reasonable to me to be prepared to pay for at least one stamp for each postal account opened.
Having a proof of posting would be more likely to result in a society waiving a replacement passbook charge.1 -
If I used the prepaid envelope and it didn't reach them, I'd expect them to swallow the cost associated unless they told me to get COP or not to use it to send passbooks.
If I used a Freepost address I found on a forum which they stopped advising people to use years ago and that led to the book going missing, I don't think I'd have a case that the loss was anyone's fault other than my own, regardless of COP.

Coming back to the topic of the thread… forgive me if I’ve missed it, but can anyone confirm whether it’s possible to fund this via faster payment/bank transfer on a monthly basis once it’s open? And is it possible to see balances online?

Seems a very strange stance for you to take on this issue given previous discussion. It sounds as though a pre-paid envelope they have sent and advised you to use is the only safe option.
If I send something in the post and it is undeliverable for whatever reason (including I made a mistake addressing it), and RM elects not to use the return address I have provided, then I would avail myself of any contractual remedy that is available.
