Go into Settings and scroll down to Notes. Then go into Password, can enable the use of the Device Passcode or a Custom code. You can also enable FaceID from there.

Depends on the Android version and device manufacturer, but should be under Settings -> Connections -> SIM Manager, then look for something like 'SIM card security'.0
