I’m curious why people are so upset about having a Microsoft account?  It has advantages, and frankly I don’t care if some computer in the cloud knows my shoe size. If you really don’t want that, then Linux beckons.
No reliance should be placed on the above! Absolutely none, do you hear?

Bing is not a browser - it is a search engine. (Duck Duck Go is another search engine, and there are others).
Do you mean that Chrome is defaulting to Bing search engine rather than Google search engine?
What I mean is what I said above:  when I click on my Chrome shortcut, I get a page headed "Microsoft Bing", with "bing.com/?PC=Q621" in the browser search box.  Nothing I have tried so far will allow me to re-set my default browser to Chrome.
That is the title of your startpage/homepage not which browser you are using.

If you get this when you double click on the Chrome icon (not a shortcut you've created) then it means you have changed your homepage to the Bing search engine.

If you get your normal startpage when you double click on the Chrome icon but the Bing startpage inside Chrome when you click on a shortcut then you've set the shortcut to open Bing search engine.

If you get Edge browser when you click a Chrome shortcut then you have deleted Chrome.

If you get Edge browser when you click a link (in for example an email) then you need to change the default browser to Chrome.

Browsers often pop up a message saying they aren't the default browser and would you like to change it.
Browsers typically have their default search engine set, but you can change it.
I treat Edge as the Firefox install utility.
