    Not sure what will happen food wise tonight, I made a pilaff for lunch - mixed grains, chestnuts, goji berries, barberries, golden raisins, black beans, chickpeas, carrots, peas, sweetcorn, sushi ginger - and served with hommous, rocket, blueberries, strawberries, raspberries, pomegranate and watermelon salad with balsamic.

  • Dinner tonight was beetroot burgers, cauliflower florets in gram flour batter, mixed grains, green beans, hommous, rocket, blueberries, strawberries, raspberries, pomegranate and a yoghurt, dill and lemon dressing. Very tasty!! 😋

  • No piccie as I've only eaten a bit due to feeling poop but I made an artichoke, potato, cauliflower, green bean and green olive with lemon casserole flavoured with lemon verbena and dill. Absolutely lovely - dh very happy that I'm not eating much as he loves it!! 😂

    Dinner tonight was a salad of rocket, blueberries, watermelon, carrot and apple salad, olives stuffed with lemon and hemp seeds, mixed grains, butter beans cooked in stock, dill and lemon verbena and a yoghurt and dijon dressing.



    The fluid that the beans were cooked in is absolutely lovely so I'm going to add some potatoes to it and use it as soup on Saturday 😋 I do love a two meals out of one situation!! 😉😁

    We had butterbeans too: butterbean and chorizo stew with tomatoes, spinach and a lot of smoked paprika. Perfect autumn food!

    Sounds lovely @Cherryfudge - I used to love the vegan chorizo by vbites but couldn't find it for ages then I discovered vegan chorizo sausages by wicked and they are really good too! 😁 squeaky bean have started doing some now so I'll try them next time I buy some...

    Dinner tonight was dark speckled lentils, spaghetti squash (homegrown), purple sweet potato, roasted tomatoes with garlic and basil (all homegrown), rocket, broccoli sprouts (homegrown), strawberries, blueberries, lemon stuffed green olives and balsamic 😋

    I need to look out for the vegan chorizo - I only tried one and it wasn't brilliant but that was a while ago so it's worth another try.

    Your meal looks lush, especially those roasted tomatoes!

    Tonight I had a salad of rocket, pomegranate, watermelon, strawberries, mixed grains, butter beans, broccoli sprouts, butter bean puree and balsamic - piccie not great as I put the broccoli sprouts on the top so obscured the rest of the meal!! 🙄😂
