    I won't be running a 2025 challenge thread as I am having a digital detox in 2025 so won't be on the boards but I'll continue for the rest of 2024. Thank you to everyone who has contributed or lurked!! 😁

    Tonight we had mixed grains, mixed beans, barberries, broccoli greens and roasted red pepper pilaff with broccoli sprouts and a rocket and black grape salad. Very yummy!! 😋

    @~FlowerPot~ - I grow the broccoli sprouts myself, the initial outlay for the seeds was reasonably high (around £20 for 1kg of organic seeds) but definitely worth it! I use about 2 tbs for a large kilner jar, soak overnight then rinse twice a day - depending on the temperature in my kitchen, they take between 3-5 days to be ready. It costs around 40p per batch and are an  equivalent volume to the packs I used to buy at the health food shop for £2.40 so a massive saving in the long run!! 

    Not sure what I'll be doing for food tonight - I'm out with dd and my grandbaby at an event so won't be back until quite late, I may end up with baked beans on toast!! 😂

  • The past few days have been full of rubbish food but I did make some dark speckled lentil 'tofu' yesterday which is lovely 😁

    I added stock powder, chopped garlic and ras el hanout to the soaking water for the lentils and blended the whole lot together before I started the cooking process and the flavours are very good! 

    Once I'd cooked it on the stove, I let it cool and set, chopped it into cubes, sprayed them with apple cider vinegar, sprinkled with salt and pepper and airfried them for 10 mins at 180°. I'll definitely prepare the tofu like this in the future as it tasted less 'beany' and the soaking fluid flavours came through strongly - I can change the flavour profile based on what I want so it's a perfect option and simple to make! It's definitely the best batch I've made of the stuff - it's a major bonus considering the quantity of dark speckled lentils I have!! 😳😂

  • I've done plenty of cooking today - I've made a vegetable soup and hm bread, a dark speckled lentil and veg pie filling (pastry is in the fridge so I'll put it together once we're ready to start cooking dinner), I've prepared carrots and parsnips ready to cook in a maple and dijon dressing and I've prepared potatoes and swede ready for cooking and mashing later. We may have the soup and bread today or perhaps tomorrow depending on how hungry dh & dil are when they arrive home.

  • The pie was eaten on the day with horseradish mash and the other veg mentioned. The following day (yesterday) the soup was eaten for lunch and a chickpea and potato curry with rice for dinner. Today, we had lunch out so had salads with a vegan camembert, a bit of hommous and bread for tonight's dinner. The salads were citrus (red grapefruit and orange); rocket and pomegranate; blueberry, strawberry and black grape. We had tomatoes, spring onions, radishes and grated carrot too but I didn't fancy any of those so mine was mainly fruit! 😋

    Just come on here to catch up and realised I'm unlikely to get any of your delicious-looking photos for a whole 12 months! You will be missed but I hope you find the detox useful. Are you replacing it with anything specific?
