I didn't fancy much for dinner last night as I'd had lentil 'omelettes' for lunch so dh just grabbed some bits from the fridge.

Change of plan - son-in-law finished the radiators earlier than expected so didn't feed him after all.
Raided the fridge instead and had steamed beetroot, new potatoes with horseradish sauce, butter beans, rocket, blueberries, strawberries, raspberries, black grapes, papaya, hommous and blood orange balsamic 😋 I'll do the tarts tomorrow 😁

Didn't have dinner last night as had a falafel, chilli jam and 'cheese' panini at lunchtime while out with the grandbabies - it was lovely but still felt bloated at dinner time 🤦♀️
I'm sorting and rearranging my kitchen cupboards over the next week so I'll do a food inventory at the same time and post it here once it's done - it will be interesting to compare with what I had at the beginning of this thread (despite having replaced used up stuff like grains and pulses over the period) - I know that I've definitely managed to get through a lot of the stuff I had in and it will focus my mind on how to creatively use the stuff that I haven't! 😁'Happiness is not a destination but the journey you walk every day'

Dinner last night was an easy and quick one - ethiopian lentils with basmati rice, sourdough pancake, yoghurt and mint and mango chutney 😁

Had a casserole tonight with dumplings and a side of spaghetti squash - definitely a comfort food thing!! 😋
I'm going to start on the inventory tomorrow - I'll do the kitchen re-sort at the same time so I'll probably do the freezer inventory the following day. I'll be starting a new thread on 7th November which will be much more focused on using up what we currently have 😉

Inventory was completed yesterday (ambient stuff only) and I've reorganised my kitchen cupboards - which basically means I'll be opening the wrong ones for weeks!! 😂 I'll do the freezer ones today and then work out a meal plan.
We're still eating the casserole I made on Wednesday (one day I will get control of portions! 🙄) as I don't want to be adding to the freezers - the kitchen one could really do with a defrost so when I do the inventories today I'm going to try to have a rejig and get as much into the chest freezer as possible 😁
New thread will be going up on 7th November - I'm definitely going to concentrate on using up stocks and spending the bare minimum on groceries; unfortunately our garden produce didn't do well this year so I will have to buy much more veg this winter 😔 However, I do have a mountain of grains and legumes to go through before I buy any more so at least that's a bonus!! 😁

Freezer inventories done - I have 6 boxes of UFO's and 5 blocks of UFO's (dh thinks the blocks may be his lunch stuff) so I'll be using at least one of those a week until they're gone!
Surprisingly, I only have 10 of my courgette, tomato, basil, onion and garlic sauce left and I always use 2 at a time in bolognese stuff so that's disappointing 😞 I had around 40- 50 blocks originally but this year I didn't make any due to a lack of courgettes - hopefully next year they'll do better and I can make more 🤞 I certainly won't be buying the ingredients during the winter/spring as the prices are ridiculous so I will have to use tinned tomatoes again (I only have 1 in stock so I know that I'll need to buy more 🤦♀️)
Anyway, I'm glad the whole inventory is completed - there are a lot of UPF'S in the freezer (I stocked up when the supermarket had an offer on earlier this year) and as they are a very occasional item on the menu, they will take a long time to get through! 😳

Meal plan for this week is:
1) Cannellini beans with dijon cashew cream, mixed grains with barberries, sunflower seeds and hemp seeds, rocket and broccoli sprout salad with black grapes, strawberries, raspberries and pomegranate.
2) Shepherdess pie made with dark speckled lentils and horseradish mash, served with broccoli and broad beans
3) Lasagne made with green lentils, wholewheat lasagne sheets, cashew 'cheese' sauce topped with ground almonds served with a rocket and broccoli sprout salad with black grapes, dried apricots and grated apple
4) Sushi with avocado and cucumber, wasabi, pickled ginger and a miso and soy dipping sauce, vegetable gyoza and inari pockets.
Not sure what days I'll be having them - the lasagne will be on Thursday as I have my grandbaby for a sleepover, the sushi etc will be either at the weekend or on Friday (I have more preparation time then) and I'll probably make the shepherdess pie on Tuesday 🤔 I'm having the cannellini bean stuff tonight as I'm desperate for some grains after having a week without them!! 😂
