    Last night's dinner was lovely - especially because all of the veg and herbs were from the garden 🙌 

    We had lemon and dill tofu; mixed grains (rye, barley, oats and short grain brown rice); steamed beetroot, carrots, parsnips, broccoli and courgettes; courgette, tarragon and lemon oil salad and a rocket, black grape and pomegranate salad. It was really lovely 😋 





    I was talking to a lady in the supermarket a few days ago about the '30 plants a week' thing - counting the herbs as a half point each, this one meal has 14!! I had a smoothie at breakfast time which had watermelon, apple, strawberries, raspberries, blackberries, redcurrants, barberries, flaxseed, cavolo nero and amla powder so an additional 10 plant items and lunch was leftover Ethiopian lentils, rice and a salad of leaves from the garden, cucumber, peppers and mint so another 6 (I'm counting the onions in the dish and the mint as half each). That means that yesterday I had 30 without even trying or thinking about it!! 🙌 I'm not sure if plant milks count towards this idea but if they do, then I had over 30 yesterday 😉😁

    That's a superb total of different plants, @leftatthetrafficlights, and I would think plant milks count towards the total as well. Your smoothie sounds delicious: you have me wanting watermelon now (one of my absolute favourites).

    Last night we had bbq chickpeas, mixed grains and salad - very nice!! 



    I have both sauce and chickpeas remaining. I will re-purpose the sauce tomorrow for spicy black beans which I'll serve with squash, purple sweet potato, plantain and corn. Tuesday will be artichoke, cauliflower, chickpea and potato casserole; Wednesday lentil pastichio; Thursday will be my new year dinner so that will be homegrown scarlett runner beans and veg in lentil pancakes with a spicy hg courgette and tomato sauce topping. Friday will be leftovers.

    Didn't serve it with purple sweet potatoes  - totally forgot!! 🤦‍♀️ I'll cook some when we have leftovers! 😉 piccie prior to the addition of salad!!

    Please could you recommend a recipe for the BBQ chickpeas? They look like my sort of thing but all the recipes seem to be for a sort of dry roasted effect rather than home made baked beans-style.

    @Cherryfudge - thank you! 😁 I got the bbq chickpeas recipe off broccoli mum's youtube channel  - it's a cup of passata (or a tin of tomatoes), 3-4 tbs apple cider vinegar,  2tbs molasses, 1tsp garlic powder, 1tsp onion powder. Bung it all in a pan, cook until reduced and then add a cornflour slurry, stir in and allow to thicken a little more before you bung in your precooked pulse of choice and cook until sauce is at your desired consistency. I've got to say that I preferred the flavour of the sauce the next day to the day I made it so I will always be making at least the day before I want into use it now. 

    Obviously the sauce can be adapted by adding different herbs/spices etc - I'm probably going to add some liquid smoke or smoked paprika next time but it's a good base to start from 😉 

    Yesterday was just leftovers and salad (dh is out tonight so I'll be having a fridge leftovers night!) so I thought I'd post yesterday's lunch instead 😁 

    Tofu slices, hommous, rocket, strawberries, raspberries, blueberries, watermelon and balsamic salad for the meal and a smoothie of watermelon, apples, mixed berries, amla powder, flaxseed and cavolo nero - it was very lovely 😁

    Thank you for the BBQ sauce recipe, @leftatthetrafficlights! I'm making a note of it, and I might try adding smoked paprika straight away as we have that in and use it often.
