  • Dinner - spring rolls, hoisin 'duck' pancakes, veg fried rice - beige and not pleasant- dh liked it thankfully but I'm not going near that sort of rubbish again 🤢 very disappointed and looking forward to my ramen tomorrow!!

  • The ramen was lovely but I forgot to take a piccie! 🤦‍♀️ 

    I've got potatoes in the cupboard so I'm going to something with those tonight - not sure whether to make olive and cumin fried potatoes or to do a curry 🤔 I've also got some red cabbage in the fridge so I'm possibly going to use that up too...lots of choices to make!! 

    Whatever I choose, I'll post a piccie 😁

    Decided to go the whole hog and make lots so I don't need to cook again until Friday! 😂 

    I made cumin and olive fried potatoes, smoky banana blossom with paprika, red cabbage steaks with ras el hanout, courgette and coconut curry and madras potatoes. Dh couldn't decide on what to have so he went for a bit of everything!!

  • Friday was walnut and mushroom bolognese with pasta, yesterday was leftovers and today was spaghetti bake. 

    I've made a few things for this week  - a courgette and tomato bake; sautéed veg cooked in 'chicken' stock (courgette, onion, scarlett runner beans, tomato, cavolo nero, cauliflower, garlic - all from the garden!); and some roasted carrot, brussel sprouts, parsnip and beetroot (garden again).

    We'll have the courgette bake and the roasted veg tomorrow with purple sweet potato; Tuesday we'll have the sautéed veg with grains.

  •  Dinner the past two nights has been a selection of the food mentioned above: a courgette and tomato bake; sautéed veg cooked in 'chicken' stock; roasted spaghetti squash; carrot; brussel sprouts; parsnip and beetroot.  I added rocket, pomegranate and hommous to it so an after & before below!! 




    Tonight will be lentils and buckwheat - tomorrow will be a soup with tonight's leftovers and veg.

  • I'm making a pie today (not sure if we're eating it tonight or tomorrow yet). 

    It will be a potato, dark speckled lentil and veg filling in shortcrust pastry and I'll serve it with mashed potatoes (possibly with horseradish in it or perhaps herbs), carlin peas, carrots and gravy. I'm really looking forward to it so it will probably end up as a tonight thing!! 😋😂 

    I'm doing the freezer inventory today as the baskets for the new freezer arrived yesterday so I'll post a men plan for the week later today.

    I plan on doing a freezer inventory/meal plan today too.  I've been rushing around because my dad's been in hospital so need to get the headspace of having the food planned at least.  Have a pot of lentil soup just made and now cooling, that's lunch for today and the start of the week sorted, don't know whether to be lazy and buy crusty bread to go with it or take the time to make a focaccia.

    @Jacs205 - sorry to hear about your dad, I hope that things improve quickly! 🤞 

    Dinner tonight was a carrot, squash, sweet potato and ginger soup with hm bread (you'll have to excuse the piccie - forgot to take one so had to quickly take a piccie of dh's before he ate it all!! 😂) 




    Pie has been made ready for tomorrow 😋 

    Meal plan has been written until my new year and no additional stuff needed apart from a cauliflower in a couple of weeks 😁
