Saturday was spent cooking more courgette and tomato base and also a job lot of ratatouille! I've ordered a new chest freezer as I am at capacity now on both the large and small freezers! 🤦♀️
I did grocery shopping at the weekend- I'll put the list and figures up later once I go through the receipt - and I also put in a bulk buy order for my vegan bouillion and 'chicken' stock powder. I buy a 2kg tub of bouillon and 6 tins of stock at a time - works out a lot cheaper that way and lasts a minimum of 6 months.
I'll be having a salad for lunch and I'm planning on making buckwheat pancakes filled with the ratatouille and topped with vegan yoghurt for dinner tonight. I'll post piccies later 😁

I decided to layer the buckwheat pancakes and ratatouille like a lasagne, couldn't be bothered to do rolling! 😂 I added nutty parm to the top of the yoghurt. I've got my grandbaby tomorrow so not sure what we'll be eating yet 🤔 I may do some type of loaf with veg...

Lemon and asparagus pasta for us tonight. A new recipe for us and, OH is cooking. The kitchen smells lovely. Our veg box was delivered today and we have Kohlrabi. I’ve used it in the past to make slaw and intend to try a soup recipe this time.3

@tooldle - that pasta sounds lush!! 😍 I adore citrus and love asparagus so it would be perfect - does it have cashew cream in it? How do you cook the asparagus?
I've been out for dinner twice in the last week which has been less than inspiring and have also had some 'just grab something' meals so I'm feeling a bit bloated and sluggish at the moment. I'm away for a few days from tomorrow too so will be limited on food choices - I'm looking forward to eating properly again when I come home!!
Tonight I'm going to make Ethiopian lentils as I have yoghurt to use up and I'm making sourdough 'pancakes' to go with it. Dh can finish any leftovers during the week 😁
I've got cavolo nero in the garden along with carrots, beetroot and plenty of beans (runner and french) which are going to be harvested when I return and feature heavily in next week's meals 😋

@leftatthetrafficlights no cashew cream, just a ‘cheese’ addition to thicken the sauce I think. Asparagus was blanched and kept to one side and added into the sauce at the end. OH had the leftovers cold for lunch and said the flavour had developed.It’s my turn tonight. I’ve just made a soup with Kohlrabi. Just blitzed it and now returned to the pain to warm. I’ve used Kohlrabi before in slaw, but this will be my first soup.1

@tooldle, thanks for that - I'll give it a go but I'll make a cashew lemon cream sauce 😁 how was the kohlrabi soup?
The Ethiopian lentils were lovely but mega hot!! 😳 I definitely overdid the berebere spice this time!! Wednesday night was my first night away and I had vegan 'meatballs' in a tomato based sauce, roasted tomatoes and a rocket, strawberry and black grape salad with balsamic. Last night I had the same salad with dark speckled lentils and millet.
Tonight I'm having lemon cannellini beans, purple sweet potatoes, beetroot and apple salad and some more rocket salad. I'll be making enough to be able to have it over two days 😋

Tonight we are having ‘Vegan bean stew with fennel’ using this recipe. https://www.lazycatkitchen.com/vegan-bean-stew-fennel/. The sauce has been bubbling away in the slow cooker and, I’ve just added the beans. Will be served with Ebly. The kitchen smells lovely.2 -

Last night we had a curry made with cauliflower, cannellini beans and coconut and served it with rice, chutneys and naan bread.
Tonight is going to be a mix of whatever is ready in the garden so probably beetroot, carrots, cavolo nero, scarlett runner beans, celery and french beans. I may do a soup or casserole with everything other than the beetroot and make a beetroot and apple salad with that...I'll post a piccie of whatever I decide!DNF: £708.92/£1000

Ended up last night having mixed grains - barley, rye, oats and short grain brown rice cooked in stock - and threw it into a pan in which I'd cooked a variety of veg from the garden - onion; garlic; courgette; scarlett runner beans; purple, yellow and green french beans; carrots; cavolo nero; tarragon and a bit of stock powder - and made a horseradish cashew cream to drizzle over it. It was absolutely delicious!! 😋 Leftovers tonight!! 🙌
