  • @Jacs205 - that sounds like a great lunch idea!! 😋 I do love stir fried veg and rice - I've never used a meat free stock cube in one before though (I normally just use tamari) so that something I'll consider next time 😁 

    Tonight, I've currently got the tempeh marinating in the sezchuan sauce and I'm going to make a red cabbage stir fry with kale and leftover green beans. I'll serve it on a bed of mixed grains with barberries and top with broccoli sprouts. I'll try to remember to take a piccie this time!! 🤦‍♀️😉😂

  • I made the tofu 'wings' yesterday - I rehydrate them in the leftover sezchuan stock base, then removed them and baked them. I added tomato ketchup, some chilli sauce, maple syrup, garlic powder and onion granules to the remaining stock base and reduced down until thickened for the sauce. They were quite pleasant, not something I'd rush out to buy again but I'm glad I've tried them 😁 

    Not sure about tonight's dinner - I've got my grandbaby tonight for the weekend so it depends on what I'm feeding him - I may make a lentil bolognese if he didn't have pasta last night, I need to phone dd!

  • Ended up cooking the last purple sweet potato and some aduki beans. I got a freezer 'surprise' out thinking it was a tomato sauce and it turned out to be curry so added some aduki beans to it! Served it all with broccoli sprouts - very nice! 😊

  • Last night's dinner was tomatoes roasted with garlic and basil, roasted peppers, hm sauerkraut, pickled onions, pickled beetroot, hommous and a ciabatta roll - very tasty and more than enough as we'd eaten out at lunchtime 😋

  • I was too tired to cook yesterday so just had some leftover roasted tomatoes and a ciabatta roll. 

    I tried to make a sourdough starter (rye) recently which began brilliantly but seemed to stop when we had the really hot weather last week - I made the decision yesterday that it wasn't worth trying to revive it so used it to make injera style  pancakes. I tried a bit of one and they are lovely - beautifully sour and will go excellently with ethiopian lentils and a variety of wats. I've frozen them individually so I can grab them when I want one. 

    Today is freezer surprise (I think it's a pasta sauce 🤔) which I'll have with pasta if I'm right and grains if I'm not! 😂

  • Dinner was dark speckled lentils, millet, red cabbage and apple, broccoli, broad beans and carrots in orange - very nice!! 😋😁

    Yesterday I bought the first shopping of the month -  4 red peppers @39p each and two punnets of grapes @£1.80 each so a total of £5.16.

    I'll need to buy more fruit and veg later in the week - I'll make a menu plan tomorrow.

    We're having leftovers today but I'll need to cook some more grains as we don't have enough millet cooked for both of us and I'll need grains for tomorrow too.

    Tomorrow I'm going to make a grain tart filled with roasted peppers and hg courgettes (first of the year!🙌) - I've got cannellini bean puree in the freezer which I'll be using for both the base and the filling 😋

  • The tart was lovely - we're finishing it off tonight along with other leftovers in the fridge (ethiopian lentils, dark speckled lentils, broad beans, carrots, broccoli leaves) and some potatoes that we harvested this morning. 

    I made the menu plan for the week and dh went shopping - he'll get a couple of more bits tomorrow as they weren't available in our local shop. 

    The menu plan is: 
    1) Lemon baked tofu, mixed grains with barberries and thyme, leaves, black grape and blueberry salad 
    2) Beetroot burgers, sweet potato wedges, edamame beans, broccoli sprouts 
    3) Banana blossom pasta sauce, wholewheat pasta, leaves
    4) Artichoke, chickpea and cauliflower stew, buckwheat, greens
    5) Soup (from the freezer- think it's squash & sweet potato 🤔) 

    I've only planned 5 meals as we always have leftovers so do a 'chuck all the random stuff on a plate' meal or I repurpose the leftovers. If we need another meal this week I will make a bean and grains dish.

    Dh has fruit for breakfast and a salad each day for lunch; I have a smoothie for breakfast and tend to eat salads, grains and beans for my lunches. 


    We bought the following fruit and veg:

    The lemonade, pot noodle and oat milk are for dh. The magnums and baked beans are for my grandbaby. The bread is for the freezer - I will be making sourdough once I've got my starter sorted but that could take a while! 

    We have salad leaves growing in the garden and I'm making broccoli sprouts regularly now so we always have those. We have calabrese growing in the garden and I am using the leaves from those for greens. 

    We still have a few other bits to get for this weeks food - we need beetroot and more grapes (if they have my favourite ones in aldi). I'll be adding those (plus any additional fruit) to week 2's list though.
