    Today I am going to have yesterday's leftovers for lunch and then make a meal plan for the rest of the week. Dh wants cabbage, beans and rice for dinner (we have cabbages in the garden) so I'll make that - I have some leftover kidney beans that I'll use up and I'll sling in some edamame beans too. We'll also start off some sauerkraut 😁 Dh will have to do the majority of the work but I'll supervise! 😂

    I haven't been able to do the challenge properly this month due to being unable to cook for a week of it so will get into it properly from 1st June. I still need to update the lists with the stuff I've bought in since I started so I'll get that done before the 1st.

    I'm going to make a banana blossom chilli today and possibly make enchiladas with it - not sure yet 🤔

    I've spent some time today working out how many portions of pulses and grains I have - I cook a cup at a time of grains/pulses and that covers the two of us for two meals, so four portions of each.

    I'm going to update my lists to state the portions- it's a lot easier than constantly updating the weights of these items each time I use them so makes much more sense to me. It also brings into focus how much more of certain grains/pulses I have than others so will help with meal planning 😉 

    Banana blossom chilli has been made - we are having it with wraps, refried beans, guacamole and tomato salsa 😋

  • We'll be using up leftovers tonight then I just need to feed us Thursday and Friday before I start my new grocery month. I need to mooch and see what fresh stuff needs using up before I decide what to cook. 

    Today I am checking the inventory and doing the update on it - I've meant to for days but have always ended up doing something else! 🤦‍♀️ I'm having an easy day today though due to overdoing it yesterday so can spend the time checking and writing! 🙌 I'll be back later 😁

  • Okay, inventory updated and sorted. I've added the amount of cups of dried goods and the amount of portions I will get out of what we have. 

    From 1st of the month I will list anything else I bring in fruit and veg wise from either the shops or garden in the general posts and any storecupboard bits will be listed on the final inventory post. That way I'll be able to keep a really accurate record of what is going on.

  • Tonight we are having vegetable balti, spiced red lentil patties, mango and coconut potatoes, raita and naan bread. I haven't made the red lentil patties for years so I'm really looking forward to them! 😁

  • @Jacs205 - this is the original recipe (I used to make them for my grandbaby) but I increase the spices for us as they need a bit more for an adult palette 😉

    1 cup red lentils soaked overnight 
    2 cloves garlic
    1/4 tsp ground cumin
    1/2 tsp smoked paprika 
    Pinch turmeric 
    1/3 cup water
    2 handfuls baby spinach leaves chopped into fine ribbons
    1/2 tbs oil for frying  

    Drain and rinse the lentils, put all ingredients other than the spinach and oil into a blender and blend until smooth (add a little more water if needed).  Stir in the spinach, heat the oil over a high heat then reduce the heat to medium and fry tablespoons of the battery for 2 minutes each side.
