  • @tooldle - thank you for posting the link 😁

The goujons were okay but nothing exciting! I'm glad I didn't buy them 😂 the chips and mushy peas were great though!

It will be interesting to see what the 'steaks' are like tonight but I'm looking forward to eating real food tomorrow 😁

The 'steaks' were very nice; good texture to them and pleasant to eat. I had to chunk the potatoes in the tartiflette instead of slicing them as they were not new potatoes and weren't holding up too well - I also had to bin the hollandaise (it was quite significantly OOD) as it tasted a bit wrong and use only cashew cream. It was all very tasty though and I feel stuffed now!! 🤦‍♀️I'm looking forward to not going near UPF'S for a considerable period of time!! 😂

  • I've put the inventory on dh's computer so that he can do me a printout tomorrow to keep in the kitchen - I've also gone through lots of different stuff to find previous meal ideas, categorised them and put them on the computer for printing too 😁 I've got 71 meals listed so far, many of them will need nothing other than current storecupboard stuff plus fresh veg/fruit added. I will continue to add more as I think of them 😁

  • Bought some fruit, veg and salad stuff today. Dinner was baked sliced purple sweet potatoes, harissa roasted cauliflower, watercress, blueberry and citrus salad, roasted sweetcorn and pineapple salsa and hommous - very tasty 😋

I made some almond and mushroom mince yesterday for tonight's bolognese - the texture is not as good as the walnut version but it's not bad at all 😁 The almonds are close to the bbe date so I've made loads of it - some will inevitably be frozen. I am going to soak the other bag of almonds today (same bbe date) then freeze them as they are - I'm normally not fussed about dates on food but nuts can go rancid quickly and then are useless 🤦‍♀️

We've got lots of leftovers from yesterday so, between those and the bolognese, I'm unlikely to need to cook for several days although I may do some repurposing! 😉

  • I used the fajita kit to make some of the bolognese into chilli last night (added more chilli sauce to give it a bit more of a kick) and added the leftover chickpeas. Still enough left for one more meal but we'll freeze that.

Tonight we're having dark speckled lentils with buckwheat, sprouting broccoli, steamed carrots with orange, roasted red peppers and a rocket, black grape and pomegranate salad.

We’ve just had black bean and sweet potato chilli from the freezer. Love an easy tea. Just what we needed on a wet and cold day.
  • @tooldle - sounds lovely! Black beans and sweet potatoes are such a good combo! 😁

Last night's dinner was roasted tomatoes; pan fried mini peppers with garlic; short grain brown rice; cannellini beans with sage; rocket, alfalfa, broccoli sprouts, pomegranate and blueberry salad and hm olive bread. We'll be having the leftovers tonight 😁

  • Tonight's dinner was aubergine stacks filled with mashed cannellini beans with sage, chopped black olives and a sauce made from hg dehydrated tomatoes, balsamic vinegar and pan fried peppers. I served it with sweet potatoes, hg sprouting broccoli, hommous and salad. The beans and peppers were the remaining leftovers from earlier in the weeks. I have lots of the tomato and pepper sauce left - the flavour is incredibly intense so not too much needed! I may run it through some pasta tomorrow 🤔
