Is this good? (page numbers are obviously wrong)Mainly Exhibit numbering? - I'm now refering to exhibits in text like so:
- For single I just say (See Exhibit 01)
- For multiple I just say (See Exhibit 01, 02, 03)
Also - do I need to attach the original tenancy agreements/contracts and bank statements files to the email?

Yes, all will be merged inside the document with the WS as shown in the index page but I'll also attach the full documents of tenancy agreements, contracts and bank statements.
