I think it is possible to register the puppy, even now. (it might cost more than the original registration though). They shouldn't be in a mad rush to get this done, since I don't think you should be breeding a dog this early on it's life (think 1 year is the youngest you can register)

But the new owners raise many red flags. Having dealt with selling a couple of litters in the past, I swiftly ignored anyone who haggled, complained about price etc. So their difficulty in scraping together a relatively small amount of money would be a concern.

I'd be tempted to state the dog was not KC registered and priced accordingly. If they want retrospective registration then the price would need to go up to reflect that

This is probably not correct as it depends on whether there is an endorsement on the Mother or Father registered with the KC
A good many pedigrees  will not ever be able   have their offspring  registered with kennel club unless the breeder lifts the endorsement if there is one in place.
This is because imbeceles were for example be tempted  Mating Working Cockers studs that are cheaper  with show cockers and then registering the bitsa as a pedigree.
The proper breeders want to stop this and will only lift the endorsement if they know the job is being done properly. At the end of the day you pays your money and you make your choice

I was suggesting that the "breeder" in this case could retrospectively register the dogs, not the new puppy owner.

KC does allow the breeder to do this - if that's a route they wanted to go.

    Personally i wouldn't entertain it

We had no formal contract, nothing in writing from either side. I just placed an advert and they bought the puppy based on what the advert said
As a lesson to others, if you are selling something of value - and especially animals - document what you agree and get both parties to sign. It protects you as much as it protects the other party - both from spurious claims as well as documenting to HMRC the contracted price should they come knocking when you don't declare the income (because if you have to subsequently register the puppies with the KC, HMRC might well wonder where the difference in cost between a registered pup and a non-registered pup might have disappeared to).
