Hmm, I think we may be forced to have the entire unit proud of the chimney breast, as the chimney breast isn’t perfectly plumb either!

But, another challenge presents itself. How to best step over the tiles? They're stepped out few millimetres on the right side, and stepped in about a centimetre on the left side! And, sit higher than the laminate. Agh1

In reality, it'll be fine.1 -
You just need to get a base up and work around it.
Tbh, this is more of an argument as to why you shouldn't try and get it flush.
The more 'problems' that present themselves the more I think you should get a professional to do it as you're asking for perfection and you're not going to get it. A professional will know what 'perfection' to sacrifice.0 -
Okay, I'll agree, there are more problems that present themselves when you try to make it flush with the face of the chimney breast... but, that doesn't have anything to do with the tiles on the floor?

The trouble with corners in any house is that they are never true, so your options are to give it a shadow gap ie set unit back 5mm and scribe to the wall or protrude the unit, even if the corner was perfect it’s always best not to finish flush as with two different materials will always crack no matter what you use also it never looks right.
All you can do with the tile is scribe unit over it.
Maybe, just once, someone will call me 'Sir' without adding, 'You're making a scene.'0 -

I don't think scribing over the tiles will ever look right, really.
So, thinking, I set the unit back 5mm, and make the top surface flush with the face of the chimney breast.1 -

And, to my eye, having the units slightly forward of the breast looks best, even if just 25mm. It's also the design of the 'pro' example (tho' more than 25mm).Surf for more pics if needed, but I'd take your cue from what you know will look best, because you'll have the evidence from having 'seen' it.Do you know what setting the unit back 5mm from the breast will look like? No, nor me! :-)
