4 eggs (not 2 as I thought) and 2-3 oz Bourneville (or chocolate of choice)Separate eggs then beat the whites until stiff. Melt chocolate in a basin over hot water, add a teaspoon of boiling water to help soften if it becomes too sticky. When chocolate is melted take off heat and stir in yolks. Pour carefully into egg whites and mix/ whisk for a minute, pop in ramekins and chill. I suggest overnight for best results.9

I like the simplisity of MrsCatz "mouse" recipe.
Here's mine just for fun......it's labelled a triple chocolate terrine but can be made as a simple mousse instead.
500 ml of heavy cream suitable for whipping
200 g each of dark, milk & white chocolate
Heat the cream to almost simmering and put half in one bowl and divide the remaining between 2 bowls.
Put all the dark chocolate into the bowl with the most cream and the milk and white choc each into the other 2 bowls. Stir them all til the chocolate melts. Then cool. (so you have 3 bowls - 1 dark choc, 1 milk & 1 white)
Whip each and then put the milk choc cream into a loaf pan lined with plastic wrap. Top with the white choc and then the dark so you have 3 layers of chocolate. Pop in the fridge for up to 4 days (LOL! as if!!!) When ready to serve invert the pan onto a plate and peel off the wrap. Slice to serve. Viola! (as they say)
Variations - can be spooned into parfait glasses or champagne flutes.
