I've long since given up on the roux method for thickening sauces. Instead make a paste with the cornflour and a splash of cold water. Add that to your recipe. Never any lumpy gravy or sauces.

I also don't do a roux but when making a white sauce I use all-in-one method (flour, milk and butter all in the pan together on a medium heat and just keep whisking still starting to thicken.)

I have a 1950s cookbook written when rationing was still in place, many recipes use little to no fat and rarely more than 5 ingredients. It’s proper food and I am enjoying using it. Our 90 something neighbours still eat and cook what I call war foods and there is no waste. There is a chocolate mouse recipe that only uses Bourneville chocolate and two eggs but feeds 412

Oh predictive text you foiled me again. I had those chocolate mice in Saturday. I will find the recipe and share. The mousse tastes very similar to the Gu pots. The mouse rates like cheap penny sweets. Both good in my book.7
