I remember making this in the late 70s, I also remember getting side tracked and making chocolate scrambled eggs when I forgot to take the chocolate off the heatMrsCatz said:4 eggs (not 2 as I thought) and 2-3 oz Bourneville (or chocolate of choice)Separate eggs then beat the whites until stiff. Melt chocolate in a basin over hot water, add a teaspoon of boiling water to help soften if it becomes too sticky. When chocolate is melted take off heat and stir in yolks. Pour carefully into egg whites and mix/ whisk for a minute, pop in ramekins and chill. I suggest overnight for best results.

Oh dear!!! Suggest you make a quarter version of mine then - it is very rich. The original recipe included a chocolate fudge sauce which I think I made once only - also incredibly rich and was def coronary material when served with the terrine. Much nicer with a bit of fruit - raspberries or thin slices of pears are nice. Sorry Brie, I have to correct you there. (I’ll assume I have years of experience over you and that’s why you don’t know) …. It’s STOLEN chocolate that has no calories. I.e. if you steal someone else’s chocolate they’re the person who bears the guilt for all the extra calories they CHOSE to bring into their house, and their diet; you then steal it for a calorie free contribution (it’s fruit as you correctly point out) to your five a day.Brie said:

Ah! Good to know a bit more about the science of it all!!! Of course I did realise that if you slice things like cakes or desserts like this calories do leak out. Same applies to biscuits - broken ones are much better for you due to calorie leakage. On the other hand whole biscuits have a lot of calories and whole biscuits that are dunked suck in even more errant calories from across the universe making them one of the worst things anyone could possibly eat.Topher said:Sorry Brie, I have to correct you there. I find the egg-y element very off putting. With the "ganache" recipe you can play about with the ratio of chocolate to cream and end up with truffles, which are no hardship.Brambling said:
