I made mine yesterday morning so we too had ours in good time before our respective online meetings and then DS & GF arrived for theirs. Lemon and sugar for me; DH tried honey and lemon but concluded he preferred lemon and sugar. DS tried everything plus golden syrup (GF's traditional favourite) - she did try additional combos, which was great as she is neurodivergent and textures are a thing. I was really pleased to see her trying them and enjoying my super-thin, 15cm diameter mean pancakes (I made 16 with two heaped spoons of flour, 2 eggs and half a pint or so of milk and a pinch of salt), and declaring she liked them, as well as the fillings. Once a year (unless we want cannelloni, in which case I sub these for pasta tubes (shh)!)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far
I also Reverse Meal Plan on that thread and grow much of our own premium price fruit and veg, joining in on the Grow your own thread

@kayannie - No, I don't know that author. I started the first couple of chapters of one of the Lisa Jewel novels on my charity bookshop pile last night though & I am finding it quite intriguing.
@Suffolk_lass - Agree that pancakes are very economical. Lemon & sugar is my favourite too. I like the crunch!
@Onebrokelady - Well, you haven't lost the chance! You can have a belated pancake day just for you!

Been usefully engaged today but not a lot of money saving activity to report....though I haven't spent anything, so that's always a positive & I will kick off with that:
*No-spend day.
*Got everything prepped & into the slow cooker nice & early for tonight's meal. I wanted to try a new recipe for Valentine's Day & selected Chilean Pork & Beans from the newer of my slow cooker books. It certainly makes a lot, as I could only just fit it in with sufficient breathing space for the lid! Planned to do a 'Cook once, eat twice' & have it tomorrow too, but I am thinking it will run to at least another portion, if not 6 in total which is fine by me. Just got to hope it's nice now, although other recipes from this book have been good.
*Made a focaccia-type thing to serve with it - it is on its 2nd proving & I need to top it in a minute.....I'm thinking rosemary, garlic & nigella seeds. Everything in stock for that, also for some guacamole as I reckon it needs something green!
*Made tomorrow's packed lunch & breakfast.
*Cleaned off some used plant labels so I can use them again for imminent seed-sowing. Also cut a few more free ones from a couple of empty spread tubs - ongoing job.
*Wrote to my sister - card & stamp from my stash.
*Did a few surveys - not a lot around while I've been online today, but no matter as still have half the month left.
*Knit a bit more cardi later.
STILL TO DO:
*Write grocery shopping list, which will need to involve a degree of creative thinking.
Ash has still got his naughty head on. He was eying my toast this morning, in much the same way as he was ogling my pancake yesterday. When he wasn't given any toast, he started attention-seeking & picked up my notepad by its bulldog clip & chucked it on the floor. Have also slightly rearranged the kitchen furniture to prevent him putting his arm in the fridge. That is going to be a very injured paw if we don't spot it & slam the door. Not sure I like the kitchen armchair where I have moved it to (Soot thinks it's rubbish) but would rather find a solution than risk an injured cat & expensive vet visit.
Right, off to sort out that focaccia before it thinks about climbing out of its tin.

Lol, @PennysIntoPounds....but Ash is only his stage name for anonymity, so I don't think that counts....& he did get his daily cat treats, I just draw the line at him giving me the sad eye to try & procure my pancake & toast!

@kayannie - It's 'I found you' & it is holding my attention thus far. Our charity bookshop always has a fab range of books, so it's a good opportunity to try new authors while helping a good cause. They return there or to another charity shop when I've finished with them or if I decided a title or author is not for me.
@rtandon27 - Well, it's for the anonymity. Our last cat had a particularly distinctive name so would have unmasked me pretty swiftly had anyone who knows us been browsing the diary threads. To be fair, we did choose the name while lolling in front of the beer tent at a festival.
