Just had a service and MOT...now engine seized!

You've misread or not understood the OP regarding what she paid and what you are talking about. She had a lot more than the service done as in your example of your own car..

A couple of people have mentioned about what the garage that currently have it have said - I will get my husband to ring them tomorrow and have a longer chat - he only had a quick one as he was leaving the house for work when they rang earlier.
The man that owns the garage where it is is a good friend of my dads for 30+ years, and i trust him implicitly!1 -
According to the manual for a 2016 Peugeot 308 - there's a temperature gauge and a red STOP warning light that illuminates with an audible signal that activates when a serious cooling system malfunction is detected. (The manual screen grabs were taken from a website where it appears to have moved a few letters around to avoid copyright laws, but the gist is easy to see)
So if your STOP light came on - it had in fact detected a serious fault, which was the point you needed to stop as soon as was practical and turn off the engine. Out of interest, after being told to STOP - what made you (him) try to restart it? Or was that the recovery people?
Until the vehicle is inspected at a workshop, we can all second guess the cause, but likely none of us will be right.
In summary the car developed a fault very quickly, told you to STOP, you did, but then tried to restart it, then recovery attended and said 'there's no coolant', and now it's at a workshop having a diagnosis?
You may very well have had a split water pipe leading to sudden loss of coolant - but it could also be a myriad of other things as well.
You'll have to wait to get the info on what the cause was, and the remedy options. I do think it unlikely linked to your previous service - but before pre-judging it's probably better to wait and see what the workshop says.0 -

If it is a loose hose that they undid to get all the water out and that came off or clip lose thatn you may have a case. TBH, I doubt it is that but do find out where the leak was.

Correct he got a stop message, pulled over immediately into the hard shoulder and took the key out. He put the key back in 5/10 mins later but when he turned it on there was nothing, no lights on the dash, no noise, so it never even attempted to start. Then the tow truck took it to the garage.
Hopefully will know more tomorrow when we speak to the garage for further information
