    I wouldn’t have thought so, sorry. Risotto rice has the ability to stay firm and absorb the liquid but I think the cauliflower would just turn to mush.

    I suppose you could do the other bits separately then plonk them on top of the cauliflower rice. I like cauliflower rice underneath a curry 😋

I was planning on salmon tomorrow and we normally have rice, and just realised there is not enough left until I go shopping next week, but I did find an unopened packet of risotto rice in the cupboard. Must admit I've never cooked my own risotto rice, but can't see why salmon risotto wouldn't be a thing.

    You can put whatever you want in a risotto but the trick is to add the liquid a little at a time. You have to keep your eye on it. I’m actually making a sausage risotto on Sunday, albeit with vegan sausage.

  • Sausage risotto sounds nice @Sun_Addict. If the salmon is a success I will buy some more rice and try different options. will make a change.

    Well done on the run. Always a shame when comfy trainers have to be consigned to the pile - mine end up as dog walking shoes usually. Big fan of Hoka shoes for exercise but previously also an asics fan - Hoka just better for my plantar fasciitis.
