Hi Inthered, there are 3 of us here, son counts as an adult, plus my daughter and grand daughter visit almost every day, although not always for full meals, thankfully! LOL
I have a confession to make - I cheat and buy the fajita spice mix and just add that to the chicken, onion and peppers. Serve it with chopped anything salad with grated cheese and salsa sauce. I tend to buy the salsa dips when reduced but have also just used tinned chopped tomatoes with herbs and chilli. The tortillas are really easy, just a basic flour, water and lard mix with a pinch of salt and baking powder if you want to use that too. I don't even bother with the baking powder, just use a pinch of bicarbonate of soda. You get about 4 tortillas per cup of flour and I have had no problems freezing these but nine times out of ten they get eaten as I make them LOLI reserve the right not to spend.
The less I spend, the more I can afford.

wow.........the plum and raisin sauce is lovely!!! It has a real Christmassy taste to it, similar to hot mince pies. I'm not going to blitz it, i'm going to portion it up into a couple of tubs and freeze. It will be lovely re-heated with icecream. I am so glad I didn't chuck the plums now!

Thanks for the tortilla recipie - is this fried in a pan or baked? Never tried making them before just got used to paying a couple of quid for 8!!
Can you use any other fat rather than lard?

Sent off for a free sample of Lenor and got accepted.
Something else good happened, but can't remember what it was (wow, when was the last time more than 1 good thing happened in a day!)
PS look up The Good Fairy candles for Valentine's Day if you haven't already seen the thread. I got my order thro (not Valentines) yesterday and they are simply fantastic.

Having decided to join this its taken some time to get ourselves organised but we started in earnest at the weekend.
No more daily papers, taking lunch to work, walking if the journey is less than a mile - husband now walking to work. My biggest luxury was the local council gym which I visit every day for a swim, but they had a vacancy for someone to do a four hour shift on Sunday mornings 7am-11am which means you get free membership - I now get free membership and a small amount of dosh which will go straight into an ISA. We've stopped drinking in the week.
