  • How, do you temper the chocolate?
  • It's getting the crystals in the chocolate to realign properly - it's not as hard as it sounds though!
'Seeding' the chocolate is the easiest method I've used. Basically you melt 1/3 - 1/2 the chocolate (carefully, don't burn it or heat it too much) then stir in the remaining non-melted chocolate to 'seed' the melted portion and create the right crystals. The majority of the non-melted chocolate will melt from the warmth of the melted portion. Lots of information here http://www.waynesthisandthat.com/tempering2.htm
Don't be put off by all the writing/chemistry it's not difficult to do. 'Test 3' about half way down the page is what I'm trying to describe above. hth

This thread bumped up again for Christmas 2011 - its an old thread but has lots of good ideas for making your own chocolate treats all year round. :)

I've got my £1 Thorntons easter eggs broken up in a binbag waiting to make these, hoping i can do it in about 2 weeks and have them all wrapped and ribboned at the beginning of December - i have quite enough to do that month already. Made a few last minute ones last year but didn't temper the chocolate and they melted very quickly (although that didn't seem to bother my children!)
As an aside, little ones made in a heart shaped silicon ice cube tray looked stunning with red sprinkles on the top.

Once these are made, how long do you think that they would last for? Thinking of making them for Xmas but want to know how far in advance i can make them?

I think if you tempered the chocolate you could make them in a couple of weeks - at least that's what I'm planning.
  • I'm thinking of doing this this year - if I have any present bulking up needed
2 years ago I melted some milk (cheap cheap tesco stuff, but added a bit of extra cocoa powder) and white chocolate, put a small dollop of each next to eah other on some tin foil - used a tooth pick to make a marbled effect on the join :) went down well.
(no idea how long it'd last, mine were all gone within a day)
  • These are great for teens to make for their friends or relatives for Christmas; already have one getting stuff ready and testing out various moulds, ready to start making them once we break up for Christmas.
  • I've spent the whole evening reading this thread:o There are some fantastic ideas. I'm going to have a trial run next week, and if it works I'll be making them for all DD's class mates as Christmas prezzies.
