Looking at your Bright app graphs, it does look as though there's an hour of 3kw consumption at around 10am daily which could be the immersion heating coming on. That would be controlled by the schedule timer function of the controller.

Be a bit wary of the stuff that Mstty has found - not saying it's wrong but its a lot different to mine and there are many more setting setting shown in the engineering menu info on this document than there are in my heatpump. So it would be helpful if you can find the model numbers of your indoor and outside units

Firstly I'd look at the timer settings -

This bloke isn't the most inspiring but he's made a few video's on how to set up your schedule timer clock, heating and other stuff. There aren't many around anymore coz it's an old unit.

I have solar but I use 1.7 kwh a day and am just reading up on whether I can save another 5w an hour during the night by switching off my router.
Switching off the router can lead to lower speeds, I suggest you leave it on 24/7  as the router will not decrease the speed of the connection when left on 24/7. Would you turn your fridge and freezer off overnight just to save a pound or two per year?
Someone please tell me what money is

We aren’t able to view usage in segments on our smart meter that I can see unfortunately. Only current/ day/ previous day, week month, year so far.
It was just over 2kw when I went to make a coffee this morning. I had already had a shower at this time.

You can try https://data.n3rgy.com to download the data from your smart meter. It gives usage at 30 minute intervals as a CSV file, which you can open into a spreadsheet and study in detail. You have to register first with some info from your IHD, but so long as your meter is reporting to the DCC, it works.

I have SMETS 1 meters but no IHD so cannot register with Bright.

    @wild666
You don't need an IHD to register with Bright.
That said, I don't know if SMETS1 meters are supported.

    I am for your replies.

I have turned off the immersion and just left the boiler on today to see if we remove this spike. Just to rule out the possibility of it being something else.

I haven’t mentioned but heating the water for 1 hour every other day isn’t enough. We both had tepid showers yesterday after heating the water for an hour and it’s obviously no warmer today having had the boiler and immersion off.

Im going to see what the temperature is like with the immersion off and just the outside fan and boiler running today.

I will have another look on the boiler for the serial number tonight, I have never been able to find it. If I can’t find it still, I’m going to try and get access to the fan if not. Probably a weekend job though.

Does the timer allow less than an hour, maybe 30-40 minutes every day?

It looks like 1 hour wasn't long enough even on the first day.
2 hours every other day may work though.
Or 1 hour daily to top up after the full tank  60C legionnaires heat.

If you PM with your e-mail address me I can send you some Daikin commissioning and installation documents which should help you understand it a bit better. I'm not suggesting that you faff around with settings - n fact I'd recommend that you don't, unless you've got some ide of what is going on.

I've also got a guide to setting up the programmer, which is a bit easier to understand than the comissioning document

it does look as though you've could have the boost (immersion heater in the tank) programmed to come on every day a around 10am

Heres anothe video - he's also not everso scintillating but it tells you how to set the heating - https://www.bing.com/videos/search?q=Daikin+Heat+Pump+Controller+Settings&&view=detail&mid=D2FB93603C125225B1A7D2FB93603C125225B1A7&&FORM=VRDGAR&ru=%2Fvideos%2Fsearch%3Fq%3DDaikin%2BHeat%2BPump%2BController%2BSettings%26FORM%3DVDMHRS

I'm trying to see if he's done one for hot water - he didn't
