can you just peel and freeze veggies or do you have to blanche first?

i have loads of carrots and onions and now potatoes i've bought cheap and want to prepare for stews etc.

And has anyone got a banana bread recipe for a breadmaker or do you just bung one in so to speak?

    xx

I'd blanche the veggies first (though I have frozen carrots from raw) and part boil the potatoes (they go VERY strange in the freezer if not part cooked first!) before freezing.

  • To throw food away is a complete disregard for all the energy that went in to producing it, the whole way from the soil to the plate.

And when so many have so little...

At least compost it if you have to and use it on your garden - buy a bokashi bin!

Recently DH was very busy at work because the customer for the project he was working on was here for a week. They put on lunch for them which was sandwiches and small portions of cheese.

There was quite a lot of stuff left, but because it would have been very frowned on for him to gather up the leftovers in sight of the customer, he took a plastic bag he had from a previous lunch and slunk back into the room and gathered up all the leftover cheese - in the dark!

He did this several times. I put it in the freezer and I've used it up now.

I don't understand people who throw away food. To me it's like throwing pound coins in the bin.
  • Leftovers?? Nah don't know what they are:rotfl:

Have 3 children who eat for england!

Seriously "leftovers" are usually when I have cooked enough for several meals eg slow cooker stuff or soup.

Rarely we have left over veggies but they are then the next days meal re vamped in someway. REcently had cauli reheated in the oven topped with grated cheese- it was a fight to get some! Delish- all stringy cheese and crispy bits on top.

the only food i throw away is left on plates.

Same here. I rarely cook too much by accident - unless I am using the slow cooker, which I fill up, and freeze some for later.

Cold meats, salad etc I use up for my lunches, as I am at home during the day. I find I can keep any eye on things that might soon be past their best, and plan to eat it before it goes off.

For veg and fruit peelings I have a composter.

We are a family of 4 - DH, me, and two DSs, one 12 and one 15, and a cat. We rarely even produce one supermarket carrier bag of rubbish a day.

I'm so glad I don't know people like some of you seem to! It must be really galling having to watch perfectly edible food being chucked in the bin. It's criminal!

I must admit we don't really have leftovers. I try to cook just what we need for a meal, though sometimes there is rice left which I will fry up the next day for my lunch with a splash of lemon juice or soy sauce.

I've got a few veggies that are "on the turn", so tomorrow night will be spent cooking up a vat of a tomatoey veggie pasta sauce. Some will be eaten tomorrow night and the rest will be portioned up and put in the freezer for a later date!

I agree food wasting is to be avoided at all costs, but sometimes it IS unavoidable. Not everyone is fortunate enough to have a garden. Try telling this to a mum in a third floor flat!!!!
