I agree @beanielou. DH is going away tomorrow until Sunday so DS2 and I will be eating from the freezer.We’ve grown a couple of courgettes in a large tub and have some small ones growing but they seem to be stunted (probably due to lack of space). Think I’ll harvest them tomorrow and maybe fry up with eggs like a fritter? Nowt wasted here!Cross-stitch WIP: Fiver Friday challenge 2025 founding member 😊 Read 25 books in 2025 11/25 Currently reading The Cliff House by Amanda Jennings0

Morning all. I make courgette fritters @Coxy11 by just grating them and squeezing them together to get the water out and to form them into patties, and then just fry them off. Add a little bit of feta cheese and mint if I'm feeling fancy!
Lost my mojo a bit at the moment as I was bitten by another horsefly at the weekend (some may remember the issues I had last year with a horsefly bite, this one is in the exact same place 😒). Currently on antibiotics, not able to walk much and just feeling a bit meh about everything. Food has been a bit off plan and I can feel it, plus not working out and doing the daily walks isn't helping. Trying to claw it back today with boiled eggs, melon and toast for breakfast, lunch is going to be a greek salad with grilled chicken and dinner is sweet and sour pork.
Hope you're all having a good day.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20171
