In reality you don’t have a lot of debt compared to some people so if it takes you longer to pay it off it’s not really a big issue. Your life, health and well being is far more important.Ooh that’s does sound an interesting job. 🤞 for that one.1 -

Setting some boundaries around when you will work overtime and when you won't sounds like a sensible plan. Getting up at silly o’clock to rush around and shop for others is no easy task and certainly does take its toll. At the point where you feel that it is impacting your quality of life, call it a day.
As mentioned above, your level of debt is actually very minimal in the grand scheme of things and if it means paying it back by Dec 22 rather than Aug 22 but you’ve a better quality of life then so be it.
You strike me as a resourceful and intuitive person, but lost in terms of career direction. What is your true passion? What do you thrive off?If you believe you can, you will. If you believe you can't, you won't.

I think I'm so determined to get rid of the debt I'm not thinking of the now, more of the later
I've been lost in what I've wanted to do for years, I've only ever stuck with my current main job as I know it's a secure job. I work in a company where my boss is decent, I basically pick and pack orders for customers who repair phones. I don't really have an interest in it at all. I do really enjoy gardening, arty things and food! It sounds like you’re job is more a ‘means to an end’ rather than a passion or career with opportunity.
So your passion is Art, Gardening and Food, that is great and actually provides you with so many options. Ever considered working in a Gardening Centre? Progressing to Supervisor and Manager opportunities?
Art can be expressed in so many ways, there are many avenues here - it’s not just about an art gallery and paintings!
If you can cook to a chef level or have chef qualifications, why not try a fancy restaurant or cafe?I’ve learnt that whilst a good income is always welcome and important, getting up in the morning and actually look forward to going in to work is a much more rewarding feeling.If you believe you can, you will. If you believe you can't, you won't.
