    Out: green beans, one of two swedes, 1/2 red onion remains of the carrots.
    Also: turned a lot of y/s parsnips into spicy soup so
    In: three portions soup.
    I think a bit of sunshine is good for frugal living. (Cranky40)

    Curried Greenbeans
    1kg greenbeans, topped and tailed, sliced to desired length
    500g onion, chopped
    500ml water
    10ml salt
    375ml vinegar
    15ml cornflour
    10ml curry powder
    250ml sugar

    Add the first four ingredients together and boil for 10 minutes.
    Mix the rest together and add to pan.
    Boil till the beans reach your desired softness.
    Serve hot or cold or bottle for later use.
    Notes: mum cuts her beans about ½cm in length, i went for about ½inch. I also added extra cornflour because i like a thicker sauce.
    Enjoy. And as with most preserves/pickles it gets better with age!

    By the time i got around to top&tail the gooseberries, they were overripe! Only researched afterwards that i could have frozen then as is and rubbed the end bits off when ready to use. Lesson learned.
    In: more green beans. From newly discovered farmer's market near me some venison sausages, jar of lamb ragu, handmade pasta. Jars of tremoso, a traditional pickled Lupin bean eaten as a snack in mediterannean countries. It one of Ms C's favourite snacks from back home and discovered it in  a new foodshop near us. Harvested maincrop potatoes going in coffee bean bag into shed this evening. Should be enough to last till christmas again!
    Out: yesterday bread ends for croutons, anchovies, vinegar, for panzanella salad. Whole chicken (being roasted as i'm writing) Tomorrow morning hm veg quiche for dinner.

    We were away for a few days and bought a L!dl veg box among other things as part of restocking on our return. For the second or third time it included a bag of good baking potatoes so today we roasted a chicken and baked potatoes at the same time - more than we needed so some can go in the freezer. I've also been using the carrots from the box, which were going over, to help use up a spicy dip and alongside the chicken. There are still a few to use. Dinner also included a small cauliflower from the box and I oiled/seasoned/roasted the cauliflower greens to add to the meal.

    I didn't find a use for the stalk part of the leaves so they've gone on the compost. Does anyone have good ideas for them? The stalk part of he cauliflower is usually diced and frozen to add to curries but today's was miniscule and looked a bit woody.

    There are still various veggies left from the box, along with some fruit and the rest of the chicken so those need to be used over the next few days - very little freezer space.

    Blackberries and greengages are now being harvested so that freezer space needs to get bigger!

    On sunday i bulk cooked some bulgar wheat to go with the roasted chicken (which i shredded). That formed the base for my lunchboxes at work and some dinners. Topped with fresh and frozen veg. Variety was pasta instead of bulgar wheat and hm bean stew instead of chicken. I managed to stick to my calorie budget every day thanks to the planning!
    In: green beans, cherry tomatoes, cabbage, chard, blackberries. All from allotment. Fish pie mix, cod croquettes. Long life milk, tomato juice. Tins mushrooms, mandarin pieces.
    Out: mashed potatoes, mystery bake (veg/chicken/tuna?!)
    I need to do some planning, still got veg needs harvesting and freezing and don't want to have to use all the meat or batch cooked meals already in freezer.

  • Haven't been on here in ages, but am getting organised for winter and emptying out the freezer. Tonight is a slow cooker lamb curry, using diced lamb and the remainders of a bag of frozen onions.

    Breakfasts this week will be the frozen croissants/pain au chocolat that are lurking in the bottom freezer drawer 😂
