donna73 said:Our freezer keeps icing up 😫 I really need to defrost it again in the next week or two, so am trying to use up lots of stuff first.Going to have an odds and sods dinner from in there tonight .Any different ideas for bananas please 🙏, there’s way too many in there. I’ve used them for banana bread , ice cream and smoothies before. Fancy doing something different with them though."Men are generally more careful of the breed(ing) of their horses and dogs than of their children" - William Penn 1644-1718

I make banana chutney - but call it Caribbean Chutney - it's really nice and not as odd as it sounds. It's good for the soul to walk with your soles on the soil.6 -
Used up an overgrown courgette / marrow that has been lurking in the meat safe since the end of the summer. Made it into spicy marrow chutney. I had to put half a butternut squash (fellow summer meat safe lurker) with it to make enough for the recipe. So now I have 4 jars of chutney to store, and half a butternut squash that will need using up within the next few days. I suspect it will be made into soup with a couple of stray sweet potatoes.

I'm making a vegetable biryani using some mixed frozen veg and some rice from the cupboard. This is one of the few veggie meals that DH is happy to eat after having it in Goa. This will also use up a coupe of onions, some garlic & ginger too!

Our supper tonight is left over chicken from a roast we had before Christmas that was in the freezer DS had put it in before writing what it was, spent 10 mins trying to establish what it was!! I've decided I'm hanging a marker pen on a piece of string above the freezer so if anyone forgets they can quickly write it on....here's hoping it'll work! That and four pheasant breasts from the keeper to make a curry, hopefully enough left over for another meal we will have homemade chapattis, and raita ( cheap leftover yogurt and mint sauce!) I'm trying to make a dent in the freezer as it's full of left overs at the moment!4

There was enough spiced mix veg to freeze 2 portions for later. Also got out a small beef joint which will be for dinner tonight and LO either tomorrow or Tuesday.

A very mild fruity chutney with just a hint of curry
12 bananas
8 oz. (225g) stoned raisins
4 oz. (125g) currants
8 oz. (225g) sugar
2 oz. (50g) salt
½ oz (12g) powdered cinnamon
1 oz. (25g) mild curry powder
1 pint (570ml) vinegar
Cooking Instructions:
Add the other fruit and spices and simmer for a further 15 minutes
Peel and slice the bananas, add them to the vinegar and boil until the consistency of porridge
Spoon into clean, warmed jars then seal and label
PS: I use a stronger curry powder for preference.

Used up two open bags of mini marshmallows (why two open bags? Who knows) and some rice krispies although it turns out Nigella's mallow krispies recipe is basically superglue. Hoping to use up the end of a bag of frozen berries in a berry cake for pudding later.4
