I made marmalade today too, a mixed citrus one to use up the various sad oranges, plus various limes and lemons that had gone either hard or soft before they could be used. Added a stray pink grapefruit from last week's Lidl veg box. I will look out for seville oranges (it sets much easier), but usually save up fruit that would otherwise be wasted.

Finally got round to freezer the LO cassoulet and have managed to put 3 x 2 portions so really pleased as got 8 portions and probably cost no more than about 50p a portion and used up some stuff from the freezer and fridge.

The mince for the marrow needed some bulking up, so boiled up the last of the pearl barley and stew mix.
Got a lovely mix from L1dl £1.50 box, will share once i done inventory.It's good for the soul to walk with your soles on the soil.5 -

cooked two defrosted drumsticks and a chilli chicken thigh tonight in my remoska and they will do cold, with some salad for lunch tomorrow and anything left will perhaps make a portion of chicken pasta just for me, maybe for my evening meal. I keep finding odd bits in the freezer ,well wrapped so I am using bits and pieces up.I found a bag of diced mushrooms in there and may make some mushroom soup with it and jazz it up with some chilli flakes and lazy garlic on Saturday. Theres a good size bag of it and it was hiding at the bottom of the freezer so if it looks ok when defrosted into the soup pan it will go Soup is a fogiving way to use things up

@carinjo thanks, they were! Number 2 son agreed. I used up the rest of the jar making a pear almond and chocolate cake which went down well with the kids and we finished last night. Interestingly the pears' mulled flavour came through much stronger in the cake.
Next set of breakfast muffins will be beetroot and feta as we have a lot of pickled bs and two packs of feta which keep getting mysteriously left out when my husbands cooks the recipes I got them for!
Just made a batch of apricot and almond flapjacks as kid snacks to avoid having to buy the ubiquitous oaty bars.
Tonight's dinner is turkey pie with a tin of carrots from the community larder and celery from Olio (ostensibly for the rabbits...)6 -
Today have taken out bacon for weekend breakfasts, burgers and buns for lunch tomorrow. Also got out some ham last night for lunch today.

Our freezer keeps icing up 😫 I really need to defrost it again in the next week or two, so am trying to use up lots of stuff first.Going to have an odds and sods dinner from in there tonight .Any different ideas for bananas please 🙏, there’s way too many in there. I’ve used them for banana bread , ice cream and smoothies before.
