I like 'think caravan', @London_1. I need to learn that!

Pancakes today - no surprise there. We bought eggs as I remembered there were only a couple left, then found the box was nearly full so it will be scrambled eggs for me soon. However, we've used milk, flour, lemon and icing sugar too, all of which were getting a bit old but that didn't stop the pancakes being good.

    Nothing used from the freezer.

The pasta here must have been in my cupboard for years. The first actual consumption of long term supplies since I moved house.

    Progress!

  • Looks tasty @RHemmings!

We finally finished the stem ginger with salmon last night, delicious. Next target is a bag of rocket which I'm feeling unexcited about so will cook some into a mushroom quesadilla, that way I'll hardly notice it

Spouse is finishing the sweet potato mash tonight and I'll have the last of the burgundy beef. A good thing that we have the meat order coming, because we've just about finished the frozen meals that I can easily eat. Still have some pea soup and squash and carrot stew which might be ok on a good day, but I definitely can't manage lentil curry.
  • I have some Singapore curry noodles to use up which are the straight to wok ones. If I got some stir fry veg what sauce would be best to buy or make to go with it please. I usually like them all with plain noodles but got these cheap and been in cupboard ages. Best before July last year so hoping still ok 🤣

I stir-fry noodles with soy sauce, minced ginger and garlic, and sesame oil as the basics. This gives more 'dry' noodles, but I like that. I quite like hoisin sauce in general, and my personal experience is that buying hoisin sauce is more reliable than other types of prepared Chinese style sauce. Buying other types can sometimes be ... risky of getting something not very nice. It takes a lot of sauce to make noodles 'wet' enough to be saucy noodles, I feel.

500 gms of beef mince diced Mushrooms, carrots,& onions, all from the freezer with some red lentils added and some oxo and Bisto gravy powder to make the gravy, made me 5 ready made dinners in the take-away boxes all topped with cheesy potato mash, plus a portion of mash to have with my dinner tonight which was my cheese and onion pasty plus some cauliflower also from freezer.

5 meals cooled and frozen to make more wriggle room in the freezer. Its so easy to batch cook five meals at once for the freezer, and makes life a lot easier when I don't feel like cooking its just get one out the night before pop into the fridge to defrost then all I have to do is M'wave some veg plus one of the meals and instant dinner in 15 minutes at most.

I still have a stash of frozen chicken to cook ,probably at the weekend I'll do a big slow-cooker potful for portioning up, probably a few curries for a change I still have a couple of chicken provencal's left in there to use up.

Also when digging around in the freezer found some spicy Halloumi in there so that will be a nice change for a light lunch later this week.
