It took me much longer than I expected, but I turned some lemons into curd! I tried what looked like the 'right' method, simmering over water, but it refused to heat up enough so in the end I found I could microwave it in short bursts with stirring in between. Now there's a jar and a half of curd which probably won't last long.
I have a real weakness for discounted lemons (Why? I mean, why? But it's a fact) and often have several needing to be used. I make old fashioned lemonade in the summer but it takes more fridge space than the curd.
I also found four lemons sitting in the fruit bowl looking desiccated. I'm not sure if this will work but I'm leaving them steeping in a bowl of water overnight to see if they will perk up. Then again, there are two in the car - long story.
I've also finished the soft cheese.I think a bit of sunshine is good for frugal living. (Cranky40)

Out yesterday: chicken to make a slow cooker pilaf and peas and garlic bread to serve with it.
Out today: stir fry pork to make Vietnamese pork (half price Simply Cook kit); frozen cherries for breakfast
Lunch will be using up leftover pilaf from yesterday and leftover roast veg from Tuesday.5 -
I have bananas that won't last much longer so I've made overnight oats for tomorrow, which also uses some yogurt that won't last long, and some blueberries from the back of the fridge (way out of date, but only three had gone off).
The lemons I put to soak have softened and I think the juice will be okay to use, but the peel is probably not worth zesting.I think a bit of sunshine is good for frugal living. (Cranky40)

In: Fish fingers, bread rolls, potato wedges
Out: duck breasts for tonight, 3 cooked sausages, 2 sea bass fillets. Also working my way through the large bag of couscous I bought a year ago, which I rediscovered when looking for something else in the cupboard. In: eggs, cheese, tinned peaches, pate, potato wedges, rather a lot of peppers.
Out: tuna pasta.
There's also breaded fish defrosting to have with the potato wedges tomorrow, another portion of tuna pasta in the fridge and I need to put a new snack in my work bag.I think a bit of sunshine is good for frugal living. (Cranky40)

Out: beef mince for bolognese, full fat milk
Using up some excess skimmed milk and old spelt flour in breakfast pancakes.
We need to start using up some gram flour but it's not something we're confident in using so will hit the recipe books. I'm sure there's a gram flour crustless quiche in one of them. Bits of several other flours still kicking around the cupboard so that might be the next push now the freezers are behaving themselves.4 -

You can also make gram flour flatbreads . Just whisk 150g gram flour, salt, pepper and 200ml cold water. Leave for 30 mins. Oil a 14cm frying pan and pour in enough batter to make thin flatbread. Cook a few mins until golden brown, turn over and cook the other side.3
