That sounds delicious @donna73 , I'm always on the look out for quick lunch items and you've reminded me to think more laterally about bean dips.
Last night I needed to use up some beetroot so adapted a recipe in a cook book I have, "Scandinavian Green", to make a beetroot, apple and shallot tart (using spelt flour). It was really tasty, and the sweetness of the apples went well with the earthiness of the beetroot.
Tonight is a tempeh massaman curry that has been bubbling away in the slow cooker all day. The house smells good, if I say so myself3 -

I made a tartiflette yesterday - leftover 'bacon' and 'sausages' cooked with onions and lots of garlic, added chopped potatoes and a tin of baby tomatoes, cooked till tender, added some leftover 'camembert' and 'cream' then cooked in the oven for 20mins - incredibly tasty and certainly a good use of the fake bacon and sausages that I just wasn't keen on!
Got to say that the violife camembert is fabulous- dh says you wouldn't know the difference! 😊DNF: £708.92/£1000

In storecupboard happenings, I have discovered that mung beans are ridiculously easy to sprout (started some last Thursday evening and they are nearly ready now). I like them in salads or chucked on top of soupsSweet and crunchy.

Sorry I've been awol recently, lots going on in rl 🙈!!
I'm starting a detox today as I've been eating rubbish and drinking ridiculous amounts for a while now and feel awful 😔 deffo need to get my mojo back!
Today for breakfast it's a watermelon, raspberry, strawberry and blueberry smoothie; lunch is short grain brown rice cooked with onions and veg stock, beetroot and apple salad, baby leaves and hommous; dinner is chickpeas, asparagus and red pepper cooked with ginger, lime juice and coriander served with a big salad and a black grape and pomegranate salsa.
Breakfast tomorrow will be a repeat of today's, lunch will be tonight's leftovers and I'm making roasted cauliflower cooked with thyme and garlic, brussel sprouts sautéed with pine nuts and parsnips in dijon mustard served on leftover short grain brown rice for tomorrow's dinner.

Glad you are back, hope all is well.
I feel the same as you about the eating (although thankfully have kept up the not drinking!) I had Covid (very mildly thankfully) and since then my eating has gone to pot. So I will join you on the healthy eating. Your food sounds lovely, especially dinner!
I had overnight oats with berries for breakfast, lunch will be carrot and coriander soup with salad and hummus, dinner is mixed bean stew with basmati rice and loads of veggies.1 -
Well it all went to poo! 🙈😂 rl has been chaotic to say the least but in about 2 weeks things should settle down 😉
I've bought a new kitchen gadget - mainly because my oven is a nightmare and takes about 30 mins to heat then cooks at random temperatures! 😲 So I've bought an instant pot duo crisp and air fryer - hopefully it will reduce my electricity usage and will be a valuable addition to my vast kitchen gadget hoard!! 😂
Today I have cooked black turtle beans with smoked paprika and chilli - dried beans to cooked dish took 50 mins - a lot less faff than the soaking, boiling and constant watching that I usually have to do! 🙌 It's also a slowcooker- I have never got on with those so I'm hoping this will change my mind - I'm going to be on the lookout now for new recipes and I'm really looking forward to air -fried tofu in lemon sauce!! I'll post what I make and let you know how it works out 😉
Over the past few days, I've been eating leaves, brown rice, strawberries, black grapes, hommous and broccoli salads with balsamic- it's been lovely and I can eat loads without feeling fat!! 😂

There's loads of recipes for Instant Pots online so definitely worth a look.

Looking forward to hearing what you make with it. I have a ninja that has similar functions and love it. It replaced my halogen oven (which I used a lot but was reaching end of life), slow cooker and pressure cooker and has given me an air fryer which I didn't have and love and steamer which I am yet to use but will do.1
