2022 Vegan Storecupboard Challenge

The last couple of days I've eaten bloomed wild rice with raw vegan mince (made from walnuts, courgettes, mushrooms, herbs), macadamia and cashew cheese, salad leaves and papaya salsa. It was lovely! 😁
Tonight we are having cauliflower steaks, courgette and tarragon salad, beetroot and apple salad and anya potatoes.
The rest of the week is as follows:
Cabbage, beans and rice
Smoky jackfruit and courgettes with tomato in buckwheat pancakes
Ethiopian lentils with broccoli and quinoa
Butternut squash soup with hm bread
Pasta with rosemary, olives, capers, garlic and lemon
All of the ingredients are currently in the house so no shopping required! 🙌DNF: £708.92/£1000

Things changed due to circumstances beyond my control so other than the cauliflower steaks and cabbage and rice dish, nothing else was done. Solstice has also been changed so I've had to rethink that.
Yesterday I was checking the freezer for something and one of my containers of courgette, tomato and basil soup/sauce fell out and broke so I defrosted it and had some as soup then added onions, garlic, caperberries and black olives to the rest which I am going to have for solstice with pasta. It's very tasty and I'm looking forward to it! 😁
Looking back at this 'challenge' I've concluded that I haven't really treated it as a challenge at all! I've used up some stuff but nowhere near what I could/should have 🤦♀️ I'll be setting up the 2023 challenge towards the end of this month and listing my current inventory - next year will absolutely be about using up everything I can from the storecupboard even if that means that my meals are less varied!
