    Giant couscous definitely works, will do that again as I only use bulghar wheat for tabbouleh whereas I use couscous for other meals so saves having an ingredient for just one dish!

    We've come across a number of Mexican recipes with beans (vegan). Also Far Eastern recipes. A favourite is a Ramen soup adapted yo fit what's at hand (spaghetti instead of noodles if that's what I have).
    We don't have dairy and are looking to reduce our animal and fish intake.

    I love, love Ramen soup and agree its versatile when it comes to using up items in the fridge, freezer or cupboards!

    I was away for a good portion of the last week so tended to go with old favourites as I was catering for (very accommodating and flexible) meat eaters - so lots of spag bol, root veg casseroles, etc. 

    This week I have some leftovers to get through tonight and then I'm thinking [something] with polenta tomorrow night. Will need to find inspiration for the [something] from the fridge...hmmmm...

    Hi!
      Yes, up for this challenge! I’ve cupboards full of noodles, pasta, beans tofu etc. On the whole, all I need to do is get in (cheap) fruit & veg for at least a couple of months, and work my way through my stockpile. 
       I think I became a bit of a prepper over lockdown/Br*xit and now with the fuel hike I’m glad I stocked up, but ultimately it has to go before it all goes out of date, as does the habit of adding more. I’m only cooking for myself and I’m trying to lose weight so I’m hoping what I have will last a fair while. 
      Got lentil mousakka & possibly also lasagne to batch cook this week, and going to eat other previous batch cooking & vegan meatless products from the freezer, bulked up with rice, cous cous, potato etc. and veg. 
    I’m setting myself £25 per week for all groceries, hoping to come in under to add to my savings. 
      Looking forward to the challenge! 🌱😊

    Grabbed a cabbage from the garden yesterday and cooked it with a leek, carrots, rosemary and stock - surprisingly, it had very little rosemary flavour so bunged in a couple of handfuls of rice and black beans along with plenty of black pepper and it was lush - got plenty left so will finish it tonight 😊 

    While I was cooking I made a jackfruit and black bean chilli - used a whole dried chipotle chilli in it so it tastes fab but blows the head off!! 😲🙈😂 I've done a cucumber and mint salsa to go with it and I have some vegan yoghurt in the fridge so hopefully it will make it easier to cope with the burn! 😉 there's enough for two meals each for us so I shouldn't have to cook again until the weekend....

  • Finally finished the chilli yesterday - it really did taste lovely but boy was it hot!! 😲😂 Ended up opening a packet of wraps so that I could use them to make an enchilada type set up with it! 

    Today I'm going to try to make some soba noodles once I grind some buckwheat and have ramen - I've still got cabbage, sprouts, a leek, carrots and a head of broccoli available so it's an ideal meal to make (plus it uses up some more of my buckwheat mountain 😉) 

    I'm making ethiopian lentils for tomorrow as I like to have wraps to scoop with in the absence of injera so that will use up the rest of the wraps and the remaining yoghurt; Tuesday I'm having the squash and beans that are in the freezer which I'll serve with buckwheat; Wednesday will be sausages, bubble and squeak and baked beans; Thursday will be haggis bites with horseradish mash and veg; Friday; Saturday will be something with puy lentils but not sure what yet!! 🤔😂

    I'm doing a stew tomorrow and I have a can of butter beans that I plan to throw into it, however I usually do the veg in the slow cooker and don't know when to add the butter beans, should I just cook separately or when would you add them in? 
  • @kacie - I'd add them in but they only need heating so I'd probably put them in for the last half hour (I don't have a slow cooker so that's a guess!! 😉) any longer and they may go mushy 🤔

    In January we went through our two freezers and itemised everything on two spreadsheets.  It is shocking how much stuff we have!  It's been a good exercise and keeps us out of the supermarket so it really helped with the savings target.  We hit the jackpot when we found an unopened packet of Beyond mince!  Having that tonight - chilli mince wraps with potato wedges  :)
