Its been a month since I submitted my defence to CCBCAQ@justice.gov.uk. I've not heard anything back, could something have gone wrong?

When you submitted it, did you receive an auto reply to your e-mail?  What does it say on your MCOL status page?

I didn't get any auto-reply, on my MCOL claim history it says 'Your acknowledgment of service was received on 13/12/2021 at 01:05:47'. I used the email address provided in the forums 'CCBCAQ@justice.gov.uk' and followed all the steps correctly, so now I am getting a bit worried.

Well it is certainly not within business hours, it having been sent on a Sunday and by Gmail.  We have had reports of failures because of this; try sending again today and, if you can using a non-Gmail address.

Thanks, i’ll try again using yahoo. Did I definitely send it to the correct email address, and havent I already missed the deadline in that case?

That e-mail address is the same one as in the NEWBIE and template, CCBCAQ@Justice.gov.uk so should be OK.

I did receive a response email this time titled "AUTO RESPONSE DO NOT REPLY - CCBC AQ Acknowledgment". Hopefully, there are no issues that I missed the deadline, I attached a screenshot showing I did initially send them my defence on time.

If there is an issue (and you should know your deadline) saving that screenshot showing you sent an e-mail on time will be good evidence.  It is not your fault that the CCBC system is not for for purpose.
ETA See here 14 December 2021 at 2:12PM <<<< LINK where @KeithP posted your deadline for you.  Suggest you check your status on MCOL.
