Thanks @joedenise and @BellaLasagna2018 I have the worlds smallest freezer. It has very little in it. I could batt have cook a couple of meals. I try and cook things that I can make last 2 days but we just eat them the next day. I’m trying to bulk things out a lot more. I’ve only got a small of beef for the stew tonight and that will do 4 bowls of stew. I need to go back to using lentils for bulking out chillis and bolognese. OH cooked on Friday and 500g of mince did 2 people 🤦🏻‍♀️. I’ve started to do chicken, chickpea and courgette curry, instead of just chicken. Will think of other ideas for meals and bulking out. We just tend to always have the same meals over and over again.

    Thanks for the support @RelievedSheff.

I could easily do that, so i freeze half of it and put lots of veg and some beans like kidney beans to make the meat stretch.

Is there no way you can have a bigger freezer?

Sounds like your OH needs a reality check!  500g of mince is a massive amount for 2 people.  It should have done at least 4 portions if not more.  I stretch anything with mince with red lentils (they disappear completely when cooked!); lots of veg such as grated carrots & courgettes, aubergine if you like it, tins of tomatoes and beans or chickpeas.

One of my favourite curries is a sweet potato and chickpea one; or chana masala which is just chickpeas, onions, tomatoes and spices; I usually add some frozen spinach as well.  If you're cooking a meat curry and you've got the time it's worth cooking a side dish like dhal and/or Bombay potatoes as then you won't need to add as much of a meat curry - you can stretch the meal by having a side dish as well; plus of course plenty of rice.

Thanks guys, OH just doesn’t realise and isn’t great when he cooks, hence why he rarely does it.

no chance of a bigger freezer no room unfortunately. Grated carrots are a good shout in bolognese. I like the sound of chana masala.

So today I have done some work, spoken to OH at length about life and relationships, actually posted my eBay items and paid some cash into my account. Have managed to pick up an old client and am having a meeting about a potential new one tonight, which all helps. Haven’t trained today and I know
thats not helping my grumpy mood any, need to make sure I find the time and inclination to do some tomorrow.

Need to do some washing and write my shopping list for tomorrow. Program and Also go through toys and see what I need to buy for Roos birthday.

OH is asleep on the sofa feeling under the weather. I’m hoping to perk him up later with left over stew.

So I didn’t do any washing or go through toys yesterday. Me and OH seem to have this awful cold bug (not covid) that’s going around. I’m wiped out!

It’s early day today. OH is already at work and I’m sat waiting for my first zoom client. Really didn’t sleep. Have been tossing and turning all night, so not feeling my best. Am going into work at 0830, hopefully finding the motivation to train then meeting my friend for coffee, who’s just had an op and is on the mend. Won’t finish fully at work until 2pm then home to sleep probably! Still need to go to lidl. I have taken steps in the right direction and have got all of the reuse-able bags out, as I keep forgetting them. We’re down to one car at the moment as rubbish one is even more rubbish than usual and needs a part which should come tomorrow. So OH is having to come back and get me. Yuk so tired. Really don’t want to be up right now!

After my client I’m going to make OH some sandwiches so he doesn’t buy a meal deal. Not sure what’s for dinner tonight.

Ok so I’m looking at money coming in and going out over the next month. This month should be quite good for money in but next month won’t be, so I need this to pay for Christmas and Roos birthday and all of that entails.
Will be back with a break down.

Ok so as it stands after everything is paid I have £100 for my half of the food shopping £100 for spends. and I have £450 for Xmas and Roos birthday and his birthday dinner out etc. My lovely friend is going to make the cake and she won’t take any payment. I have a bottle of gin I got given as a present and won’t drink,  which she’ll appreciate and I’ll order her some vegan sweets.

This makes me happy as I have a target amount I know I have and can’t spend any more.

So yesterday I managed to do some surveys so am waiting for £5 to drop which will take me over £10 and I’ll draw that out. Still haven’t been to lidl and I need to go this evening. Am at work at 1400-2200 with OH. I have 2 classes to teach, a private client who has already paid and I need to do some training at some point. But hoping o have the time to pop to lidl at some point. Need cat food and fuel so will get OH to pay.

I’m sat watching Christmas films drinking tea. I don’t often have time to sit, the cat is curled up on my lap. It’s nice.

Ok, so today is a busy day.

I need to do lots of different things. I’ve got a Remembrance Day workout at 11, then I could do with going into the city and getting some bits for Roo’s birthday, but not sure I’ll have the time so that might have to wait until tomorrow.

I’m picking the children up at 3 then we have swimming at 5.30 and I have work for an hour at 7.45. A bit of a bitty day. I’ve just sorted out my new clients. Which is an extra £75 a week! V happy about that!

I’m not sure I’ve worked my money out correctly so I’m going to look again and see if I have enough for everything.
