I've sent my defence off, thanks again for everyones help.
Do I need to send a copy to UKPC? I read on another post about someone doing that but my brain is frazzled and I can't remember why or where I read that (I am very aware all of your brains must be way more frazzled haha)

Not legally, but it's suggested to do so such that the claimant knows that the claim is defended.
(It doesn't change any timescales though - the 28 days clock for the C doesn't start until they receive your defence from the CCBC). Jenni x2 -
