Have you found that there's random availability of tripe though? You can't find it in some places but in others it's plentiful , although some of it is poor quality
Your welcome and your right it can be very poor quality .unfortunately you find the more there is the poorer quality it is ,I guess you just got to be careful which tripe you partake of
southern tripe is a poor imitation, its tasteless, bitter, generally nasty and rancid ....................well the last lot my mum got in Plymouth was anyway :-/
Anyhow back to crusty bread.........it really is lovely dipped in the sauce/juice of tripe and onions
