Happy hump dayHope your cook book inspires you; i'm veggie and don't like aubergines (or mushrooms!) and i eat a varied amount of food.
My boss gave me a huge task yesterday so i shall be plodding through that for the next couple of weeks. I was supposed to go into work next week but our meeting got cancelled so i can WfH all week,yay

I bought my friend a vegan mug cake book for Christmas and I bought one for myself while I was at it because the friend that I make cakes and biscuits for has a dairy allergy. The idea for first friend and I who both mostly eat alone (the HT only eats pizza and things with cheese and friend is a busy doctor) is that instead of making or buying a big cake or lots of little cakes that we then eat all of ourselves is that we just make one cake in a mug if we have a craving. We're also both trying to lose weight (the eternal battle). The link is here
That has just reminded me that I have another odd little book called Meal in a Mug. I've just had a quick look and some of the recipes look like they'd be ok for a quick lunch. There's some that have meat in but there's also goats cheese basil and tomato quiche (no pastry obviously) and macaroni cheese which I feel like I may need to try. No idea where mine came from but the link on the bay is here3 -

Happy hump day all, I love the mug idea! Eeking out my grocery budget until end of Jan (only £24 left 🤦😬😂) so we might be eating some mug sized meals!
