Last year I received a flight voucher from Easy jet at the time that was the only option offered to me. I have since found out I could have got a refund. I emailed easyJet to ask to have the refund and explained that I was given that option at the time. They have refused is there anything I can do to get a refund?

No, not really if the flight still operated and you just took up their offer to reschedule your travel plans.
You could however search the Coronavirus Travel forum for the EasyJet threads to see what others in the same situation have said. https://forums.moneysavingexpert.com/categories/travel-chaos-help-info

Was the flight you were booked on cancelled by EasyJet? You mention voucher being the only option available to you which indicates that the flight operated or, if it was cancelled, that you did not call them to request a refund and instead requested a voucher online. It took them a few weeks to get the systems updated to be able to request refunds online and in the interim period you needed to phone for refund. I had 2 flights cancelled at the end of March the email notification gave me the option for refund but needed to phone to do it...took me 3 weeks to get through on phone but when I did refunds were back in bank account within a couple of days.
Most (all?) airlines are taking the stance that once you requested and received a voucher you cannot change your mind.
