Kitchen Sink Purchase - any help please?

Hi
I need to buy a sink and tap for my new kitchen, I have no idea where to start. Ceramic, Granite, Stainless Steel, which is best?
Work surface will be quartz and my fitter has recommended an under mounted, but other than that I have no idea on brands or type, I’ll also need a mixer tap to match.
Is anyone able to offer advice on brands and which type is most hardwearing?

Thank you, sorry possibly a daft question, but is this ok to be used with a quartz worktop?
I’ve not done anything like this before, I normally buy everything through someone who supplies and fits. It’s the first time I’ve bought a things individually!0 -
We had under mount at old house the sealant / glue failed after about 6years and it was a reall pain in the ..... so went for a standard one in this house and it is so much better. Plus used the “cut out” as a chopping board.4

i've never been a fan of undermounts, they seem hard work to keep clean. if you don't keep on top of it, the silicone grows mould, and you can see it.
if the silicone on a regular sink grows mould, you can't see it...
also, they are sooo much more expensive, I think the granite worktop folk want an extra £300 just to cut a smaller hole, and put a few grooves in for a draining board. seems dis-proportionately expensive to me

Don't get a black resin one, they discolour very quickly.

I got an astacast grey one 3 years ago, was warned about composite sinks staining or discolouring, seems to be fine so far.
back in the 90's and noughties when lighter shades were more common, yes I agree a lot of those cream or clay colored ones seem to look dirty very quickly. grey seems to be a good colour to hide these things, luckily thats "in" right now1 -
I've inherited all sorts over the years. Always replace with standard fit stainless steel - large, deep bowl. Easy to keep clean, does not discolour.2
